Peru

Come and explore the history of Lima’s Pueblo Libre district through its food. This central area is where Peru’s independence from Spain took shape in the early 19th century, which led to its renaming from Magdalena Vieja to “Free Town.” Désirée will explain the events leading up to July 28, 1821, and how this part of Lima was first settled by pre-Columbian cultures. She will take you to Quinta de los Libertadores, which served as residence and political headquarters for independence leaders such as José de San Martín and Simón Bolívar, as well as to the National Museum of Archaeology, Anthropology, and History of Peru.

There’s a lot of history to absorb, which is why Désirée has designed this walking tour as a food odyssey. She will accompany you to a local market to taste juices, fruits, Andean breads, and to learn about medicinal herbs still used today. You’ll watch ceviche being prepared at the market before tasting it, and stop at a traditional tavern for pisco and local bites.

This historic district is one of the least visited in Lima, despite having staged some of Peru’s most important political moments. Pueblo Libre played a key role during the independence period, hosting leaders who shaped the new republic decades after the rebellion of Túpac Amaru II had challenged colonial rule. It was in this context that the motto “Firme y Feliz por la Unión” (Firm and Happy for the Union) emerged, reflecting early efforts to define national identity and cohesion after independence.

Désirée grew up in Pueblo Libre and sheds light on these moments of history through food. Beyond monuments, she introduces you to families who have run market stalls for decades. Nearby, a chef shows how he prepares ceviche using fresh fish sourced locally. In this experience, you examine how these traditional forms have evolved into contemporary expressions, learning about the clay, natural pigments, firing methods, and generational knowledge that shape each piece. In the mist-covered Blue Mountains of Jamaica lies the enchanting Holywell Park, a hidden gem that whispers stories of nature's wonders. Amidst the lush greenery, we embarked on a long walk with a local guide, seeking tranquility. We wandered through the verdant trails, each turn unveiling a canvas of vibrant ferns, towering trees, and melodious bird songs that filled the air.

Holywell Recreational Park, situated about 3,000 feet above sea level and roughly an hour's drive from Kingston, is a haven for nature enthusiasts. The park, part of the Blue and John Crow Mountains, is a lush sanctuary that boasts several species of ferns among other flora like wild raspberries, cheeseberries, epiphytes, nasturtiums, impatients, and notable trees including the Blue Mahoe (Jamaica’s national tree), Caribbean Pine, and Milkwood. The park also supports various species of endemic birds. It offers a range of trails with varying difficulties, from easy to moderate, and can take anywhere from 20 to 90 minutes to complete, providing an immersive nature experience amidst the cooler mountain temperatures.
