In 1540, the Spanish conquistador Pedro de Valdivia raised his cross upon this volcanic outcrop, thus founding Santiago as a bastion of empire. You’ll taste early-harvest Extra Virgin Olive Oil (EVOO)—pressed in October from the season’s first green fruits. Reyes compares olives to people: “In October, they’re green. Now they’re golden. On the epic Ring Road drive (A1) in East Iceland, there’s a black sand beach called Stokksnes, just a few kilometres from Höfn. 

A gravel road gets you to a tiny cafeteria - where you can pay a small fee to drive further in till the edge of the water. 

Volcanic black sand dunes, Tall green grasses. Waves breaking on the rocks. Wind. Reflections in the water. Incredible beauty. Pure zen.

Exploring Jamaica's coffee heritage at James Dennis's Farm, in a tiny place called Section, Portland in the Blue Mountains. 

Catching the action of a typical day – Beans roasting in a Dutch pot over a crackling wood fire. Farm life soundtracked by birdsong. Sunlight piercing fog. Robust coffee aromas filling the air. Tradition, craft, passion, family, community in motion.

This being a ‘chill trip’, we did not want to hike 10 hours on a glacier. Instead we trek on the Vatnajokull glacier looking for ice caves with wind on our face and ice under our feet.

Earlier, we woke up at 7 and drive in cold and windy January to Skaftafell National Park to meet Einar, our guide. 

This cave... like others ... started forming In August but you are never sure it will be stable to explore till later. In September, the loose ceiling collapsed  and this brilliant cave was formed.

These fragile and transitory structure require constant maintenance from falling rock and melting icicles. Einer enters the cave and spots a few boulders on the roof. He removes them to prevent harm to the cave and us. 

As we move around, the cave looks different as our viewing angle and the sunlight outside changes.

We are in complete awe ... and hungry. Luckily a steaming meal of lamb and potatoes is close by.

4 - The Albertas Chapel and Oriental Art: The Albertas Chapel, part of the original palace, exemplifies Portuguese baroque with its gilt carvings and blue-and-white tile panels. The Guadalquivir River Walk in Seville offers a peaceful yet vibrant way to experience the city’s charm while enjoying scenic views along one of Spain’s most historic rivers. The river itself played a key role in Seville’s development, once serving as the main conduit for trade with the New World. Best Times to Visit and Activities: La Caleta Beach is a year-round destination, with the summer months from June to October being ideal for swimming. The beach fills with life as locals and visitors alike bask in the sun or enjoy the cool waters. Evenings at La Caleta are particularly magical, as the setting sun paints the sky in pastel hues. Beyond swimming, the beach's calm waters are suitable for kayaking.
