The cooking experience and wine pairing take place in the home of Al Ramirez, a sommelier and street artist from Valparaíso. In keeping with the spirit of "sobremesa", the cherished Chilean tradition of lingering around the table, the experience is unhurried and focuses as much on human stories as kitchen secrets. 

You'll start with every Porteño's favorite sharer—Calugas de Pescado, a platter of fried fish drizzled with lemon. Machas a la Parmesana (baked razor clams) follow suit while a pasta dish fusing Chilean and Italian techniques simmers on the stove. Dobladitas (French-inspired bread) served with pebre (Chilean salsa) or manjar (dulce de leche) completes the experience. Al Ramirez is a tourism entrepreneur, Sommelier, chef, and street artist from Valparaíso who thrives off connections with people from all walks of life. Scuola Grande di San Rocco

Experience the elegance of the Nani Bernardo Palace, designed by Architect Vittoria in 1550. Marvel at its harmonious aspect, enriched by a valuable hidden Venetian garden. Should Nani Bernardo be unavailable, the alternative stop is Ca' Rezzonico Palace, another marvel of Venetian architecture - or a similar equally stunning palace, specially selected by Lucia. 

This is a private palace that is accessible only by appointment and with the help of our connection with Lucia. 

Designed by Architect Vittoria, on commission from the Bernardo family, the Palace was built in 1550. 
Around 200 years ago, the current owner's ancestors added a new Italian garden to the palace, demolishing a series of houses on the side closest to the Grand Canal in the process and gave the Palazzo Nani Bernardo an entirely new, and harmonious aspect that is still evident today.

Another element is the really valuable back garden, very nice and extraordinarily extended in length, made during the eighteenth century. In case Nani Bernardo is booked out for a private event, we will replace this stop with Ca. Rezzonico Palace or an equally stunning palace.

This is one of the last remaining boatyards of Venice. Typically hard to access since it's a working facility and tours are not provided without prior notice. Mexico

A short guided hike of roughly two hours will take you to a series of caves featuring rustic paintings and traces of human habitation dating back over 10,000 years. They depict the early domestication period of the Zapotec people, when their ancestors first settled here as hunter-gatherers. These caverns are part of a larger network of over 200 caves in Yagul, where the earliest remnants of domesticated corn—a tiny and now obsolete variety known as teocintle—were discovered. This entire area was designated a UNESCO World Heritage Site in 2010.

As these caves are protected and the town operates under Indigenous law, it’s required that we travel with a local guide provided by the pueblo’s government office.

After the hike, we’ll continue the corn theme with lunch at a local restaurant, sampling one of the most iconic corn-based dishes in Oaxaca: the tlayuda. We’ll share a variety of styles, along with a refreshing non-alcoholic agua fresca.

This hike is a chance to appreciate the splendor of the Oaxacan countryside and gain insight into the earliest Zapotec people who settled in this land. Your host, a long-time Oaxaca resident with strong connections to this community, will arrange the hike with a guide from the local government office to ensure the experience complies with Indigenous law for this protected area. Participants can specify whether they would like the tour in English or Spanish. This offers unmatched insight into the history and ecology of the region.

You’ll then explore the magic of corn firsthand by trying one of Oaxaca’s most iconic delicacies—the tlayuda.
