Chile

This photography experience takes place in the small coastal city of Concón, cocooned in the cliffs north of Valparaíso. You will explore three fragile ecosystems: the Concón Wetlands (Humedales de Concón), La Roca Oceánica (Ocean Rock), and the Dunes of Concón (Dunas de Concón). At each, you'll photograph flora and fauna under the mentorship of David, a local creative who grew up amid this windswept beauty spot. 

The experience takes place in the late afternoon and concludes with golden hour and sunset at the Dunes of Concón. Starting at the reed-lined wetlands, you'll encounter such birdlife as pelicans and perritos (white-backed stilts). Afterwards, you'll pause for coffee and empanada at Surf Beach (Playa La Boca). Frequented by local surfers—David included—this is an opportunity to flex your "moving target" skills! A small hike through the surreal dune system brings you to a vantage point from which you can take in panoramic views of the Pacific Ocean and Viña del Mar.

Concón is a hidden gem in Chile's Valparaíso Region. Inhabited by artists, families, young professionals, surfers, and gourmands, the city has a bohemian ambiance minus the bustle of its mother city. Growing up amid the windswept dunes of Concón and the bohemian streets of Valparaíso kindled David's appreciation for photography, nature, and art. He graduated from the University of Playa Ancha and went on to work as a Software Engineer, while flexing his skills behind the lens. 

As a self-taught photographer, David has honed his talent working with both landscapes and portraiture. He has an experimental style and a keen eye for spotting easily-missed details He has a special ability to see the potential in the simple aspects of local reality and culture, and always seeks to capture them in an original way through his photography. He works with a Canon DSLR, using 50mm and 18-55mm lenses for regular shots and a 300mm lens to capture distant subjects with clarity and depth.

David draws upon his extensive archive of travel photography experiences while mentoring those visiting Valparaíso on how to capture the beauty of a location and why you should look beyond what's at eye level.

In the heart of Mamoiada, behind a solid façade from the late 1800s, an ancestral granite cellar opens its doors for rare, intimate wine experiences. Once the home of Luca’s maternal grandparents, the house was carefully restored in the early 2000s, preserving its original Sardinian architecture.

Inside, thick stone walls embrace rooms filled with solid wood furniture, faded family portraits, and the scent of time. A small display of traditional winemaking tools tells another story—the press, the granite grinder, the wooden vat.

Here, you’ll taste two of Luca’s wines made from Cannonau and Granatza grapes, paired with local cheese and cured meats. As you sip, he shares family memories and village tales, tracing the bond between his roots and this land.

This is much more than a tasting—it’s a quiet conversation inside Mamoiada’s soul, where wine carries the weight of time and stories linger in every corner.

In this experience, you’ll discover that ham carving isn’t just a technique — it’s an art form, practiced with care and reverence. At a family-run business, master carvers will demonstrate how each cut affects the flavor, texture, and aroma. As they work with precision and passion, they’ll explain the different parts of the ham and the history and tradition behind it.

Your expert host will explain why true Iberian ham can only be produced in Spain, highlight its distinctive characteristics, and explore the different quality levels, from natural grain-fed ham to the prized 100% Iberian acorn-fed ham — and why each deserves its place on the plate.

This experience takes place in a family business in Madrid’s historic Austrias neighborhood. It’s run by the third generation of the Arroyo family, whose grandfather founded the business 65 years ago. They still source their jamón ibérico from the same farms — small producers who raise black Iberian pigs on oak-covered dehesa. This experience traces Lisbon’s riverfront through Belém, where Tejo (Tagus) River once marked the edge of empire. This district was the departure point for voyages during the Age of Discoveries, when ships sailed toward Africa, Brazil and India.

You begin in a traditional bakery to taste pastéis de nata, custard tarts made from a recipe linked to the nearby monastery. From there, you visit Mosteiro dos Jerónimos — a defining example of Manueline architecture. Its cloisters and church were built with wealth from maritime trade and house the tombs of Vasco da Gama and Luís de Camões. Cross the lawns toward Torre de Belém, a fortified tower that once guarded the mouth of the Tejo. 

After a wine and oyster tasting — grounded in the Tejo estuary’s long history as a rich fishing ground — you board a private boat along the Tejo toward Terreiro do Paço, arriving at Lisbon’s grand river square. The journey concludes with a ginjinha in hand, facing the water that shaped the city’s history.

Praça Afonso de Albuquerque

You step into the historic bakery where custard tarts have been made since 1837 using a recipe linked to the nearby Mosteiro dos Jerónimos. After the dissolution of religious orders in 1834, the monastery’s recipe was adapted and preserved here. 

Unlike generic pastry stops, here you are experiencing a recipe with direct links to the monastery just a few minutes away. The tart embodies Portugal’s blend of humble ingredients, monastic tradition, and the imperial-era spice trade.

You won’t go inside the tower, but you have time to appreciate its symbolism and hear its stories from Rita — as a meeting point of defence, exploration, and aesthetics — and understand its role as both a fortress and a ceremonial gateway to Lisbon.

This two-hour experience takes place in the studio of celebrated tango dancer and choreographer Gisela Vidal. Through a private workshop, you’ll explore the fundamentals of tango—from musicality and posture to the nonverbal connection between lead and follow. Gisela’s approach makes space for both technique and emotion.

After dancing, you’ll sit with Gisela over mate (herbal infusion) or wine to reflect on tango’s evolution, her global career and the emotional qualities that make tango a living art. The final part of the experience offers a window into Gisela’s creative practice as a jewelry designer. You’ll explore how tango’s gestures, shapes, and symbolism have influenced her tango-inspired jewelry—shaped by the same rhythm, elegance and emotional nuance she brings to her dance. Through carefully structured exercises and improvised practice, she helps each student find their own rhythm and presence. Growing up in Buenos Aires, Gisela Vidal danced her first tango at the age of 14. From there, she trained extensively in Tango Salon and Tango Stage style with the finest Argentinian Masters. Besides tango, Gisela has studied contemporary dance, jazz, belly dance, ballet, Argentine folk, and salsa. She has undertaken further tuition in theater and film acting, mime and clown art, and singing.

Gisela has participated in international tango festivals and major events including the opening of the Dakar 2009 in Buenos Aires. She was the choreographer and a stunt dancer for the Tango Infedele Video Clip.

DAY 1 – CLAY, FLOATING, AND STARS | The journey begins gently in the Salt Mountain Range, where you’ll be welcomed into the adobe studio of a local ceramic artist.
