Chile

This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Back at her studio, you’ll taste three distinct mezcals from Guerrero, each carefully selected by Andrea. As you sip, she shares the cultural context behind each variety — from the agave species to traditional distillation methods. You’ll learn how to “kiss” the mezcal, as Spanish speakers say — a slow, attentive tasting style that reveals each glass’s unique character. Each mezcal is paired with locally inspired bites, drawing on the Guerrero heritage Andrea brings to both her cooking and design, and curated to enhance and echo the complexity of the spirits.

In 1953, Shoghi Effendi, guardian of the Bahá'í Faith, envisioned a temple to unite a continent. By 2016, this dream crystallized into the Mother Temple of South America—and today this is the first stop on your one-day odyssey of Santiago de Chile.

The Bahá'í Temple of Santiago is a structure of nine luminous “petals” each arching skyward like a prayer. Thirty meters high, its glass-clad sails filter daylight into a sanctuary for 600 souls, symbolizing the Bahá'í tenet of oneness.

Nestled beside the 18th-century San Vicente Ferrer Church in Santiago's Los Condes district, this enclave of 200 workshops hums with the legacy of Mapuche metalsmiths, colonial leather workers, and mestizo weavers. 

Julio will weave you around the artisan village and introduce you to craftspeople who will share their work and stories. As this is an opportune moment to pick up souvenirs, it is advisable to carry cash (Chilean pesos).

Refresh with a tangy Pisco Sour and savor Pastel de Choclo—a caramelized corn pie steeped in Andean tradition. My taxi driver, Chand, tries his best to persuade me to change the plan - “K.R. Market is a complete mess in the rainy season”, he argues, and for effect, twists his head around to the back seat to look at my tunic, shakes his head, and declares woefully — “You will be covered in mud and smelly water”. Sadly for him, I can’t resist a wholesale flower market. 

At sunrise every day, the southern end of Avenue Road lines up with a couple hundred flower vendors. Business between 5 to 8 a.m. is hectic and noisy.. Since it’s well past 10 a.m. now, I weave my way instead through stalls of vegetables, fruits and spices to find the building where these vendors disappear to after their morning sales. 

Chand is right about the mulch smells and slushy floors.  Climb up to the second floor to find a quiet spot to view the action from above. Or wander through the narrow passages, as I do, stepping around baskets full of flowers. 

For the record, my tunic remains mud-and-slush-free.

Eclairs, ratatouille, fromage – mhmm, so yummy – paired with a glass of wine and pleasant company, a French cooking class is a trip for all the senses (and fun, too). We opted for a private cooking class in Paris with Léo, a chef who has cooked in several top restaurants throughout his life. 

The first dish we learned how to cook was a French cheese plate and handmade bread accompanied by filled vine leaves. After that, we learned about French cuisine, the main ingredients, preparation methods, history, and drank some more wine. We learned what ingredients make the French kitchen unique (wine, vinegar, and cheese) and made a delicious ratatouille, one of France's most popular vegetable dishes. 

We read you can also do these courses online, but you have to get the ingredients and tools beforehand. A good option for digital visitors!
