Spain

The great American novelist and journalist Ernest Hemingway spent some of the best days and nights of his life in Madrid. Starting as a young aficionado of the bullfights, he returned as a foreign correspondent for dangerous reporting assignments during the Spanish Civil War, and later shared drinks around town with visiting Hollywood stars of the 1950s. Much of his best fiction was based on these experiences in Madrid and across Spain.

This experience invites you to read Herculaneum as a city caught mid-life by the AD 79 eruption of Vesuvius. You follow basalt streets, pause at corner fountains, and look into shops where stone counters still hold recessed jars. Wood endured here as charcoal—doors, beams, even furniture outlines—so kitchens, stairways, and upper floors remain readable. Worn thresholds and bakeries with mills and ovens make daily habits visible, while pyroclastic surges and mud sealed what they touched.

You'll trace the ancient shoreline, now inland, including the vaulted boat sheds (known as the fornici), the site’s starkest memory, the place where people sought refuge in a last desperate attempt to escape. Nearby, the Baths show pools, mosaics, changing rooms, and underfloor heating. You'll also discover the House of Neptune and Amphitrite with its mosaic, the College of the Augustales with painted panels, and the House of the Wooden Partition with its sliding screen.

In an interactive language class led by a native Náhuatl speaker from the community, travelers will learn the basics of this ancient language. In the town, you will be hosted by Guillermina Ríos Palma, a speaker of the San Mateo Almomoloa dialect of Náhuatl. She has stood out for her dedication to preserving her native tongue. She has participated as a lead collaborator in linguistic documentation projectssuch as the Náhuatl Dialectology Project led by the National Institute of Indigenous Languages. She has also been active in compiling vocabulary to safeguard linguistic memory. Guillermina is an authentic and proud Indigenous woman who, along with her family, is always willing to share her lifestyle and the deep connection her community has with nature.

With 25+ years of crafting Jamaican traditional meals, Chef Chris gained fame when Anthony Bourdain showcased his skills on "Parts Unknown" in 2014. 

From the moment we stepped into the Cook Shop, all our senses were engaged. The local scenes, the staff busy with their preparation and the aromas from the kitchen. But it was Chris's warm welcome that made the experience truly unforgettable. We chopped, marinated, and grilled under his guidance, learning the art of his signature jerk chicken and curry goat. Then we gathered on his rooftop deck overlooking James Bond Beach in the distance – a lovely backdrop to our culinary adventure - to eat together. We savored the dishes we helped create, and Chef Chris even shared a packet of his secret curry powder for us to take home.
