Japan

In juxtaposition to the prim and proper atmosphere of traditional Kyoto are the Tachinomi, casual bars invented for the Japanese blue and white-collar crowds to let their hair down. Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

Mexico

A full-day passage from blue-agave rows to the tasting table in the Tequila Denomination of Origin. You depart Guadalajara by luxury SUV in the morning for the Lowlands — Tequila, Amatitán, El Arenal — where warm days and volcanic soils shape the plant. Breakfast sets the pace (gorditas, barbacoa tacos, café de olla). 

In the fields, your host tells you about the rows (age, brix, ripeness) and demonstrates the "jima" with the "coa". This dedication led her to create her space in Mexico City, a haberdashery designed to inspire creativity and reconnect makers with traditional craft materials. Every object is carefully curated to spark imagination, from native cottons and handspun silks to handmade papers, natural waxes, wools, and bulk natural dyes—offering an array of things to make things.

Clara shares this space with her expert colleague, Mariana, whose curiosity and knowledge enrich every workshop. This experience begins with a walk through the historic center of Tempio Pausania, known as the “City of Stone” for its granite buildings. The route leads to the old railway station, a Liberty-style building opened in 1931, with original wooden interiors and pictures by Sardinian artist Giuseppe Biasi.

The highlight is a private, exclusive performance by the Coro Gabriel, one of Sardinia’s oldest vocal ensembles. They sing the tasgia, a rare polyphonic chant that evolved from the UNESCO-listed canto a tenore. Unlike its predecessor, the tasgia features all four voices singing lyrics and includes improvisational shifts in tone and harmony, echoing elements of jazz. With fewer than twenty practitioners left, this is a rare chance to hear it live.

Gianmario, a native of Tempio and a member of the choir, shares insights into this evolving tradition. His ties to the group offer an intimate perspective on Sardinian culture, set in the town that has long been the cultural heart of Gallura.

What makes this experience special is the rare chance to meet the singers themselves and hear the tasgia performed in a setting that enhances both its sound and meaning. This chant survives only in northern Sardinia, and is normally preserved within small, tight-knit communities. Here, it opens up to you.

The performance takes place inside Tempio’s old train station, a quiet, evocative building from the 1930s. It's the only public site in Sardinia where you can still see original murals by Giuseppe Biasi, one of Sardinia’s most important painters, whose work shaped the island’s modern visual identity.

Gianmario, the bass voice of the choir, welcomes you into this world not as a spectator passing by, but as a guest who is invited to immerse in the shared emotion of it. His role in the group opens the door to an intimate exchange with the other singers, offering rare access to a tradition that continues to evolve—yet remains deeply rooted in place.

After honing his skills in England, he specialized in advertising, fashion, and design, collaborating with prominent photographers and brands. In 2009, he returned to Sardinia to establish his studio, focusing on the island's breathtaking landscapes and vibrant culture. He is also a singer in a traditional choir that performs the tasgia, one of Sardinia’s rarest polyphonic chants, and has long been immersed in the region’s musical heritage, especially the vocal traditions of Gallura.

A relationship-led full-day wine journey through the Médoc, shaped by long-standing ties with family estates and classified châteaux - highlighting the wine, people, and continuity.

Begin with pickup at your accommodation in Bordeaux and a drive north into the Médoc, where vineyards stretch between the Gironde estuary and the Atlantic. The first stop is a family owned winery. A guided visit introduces traditional production methods, and the tasting reflects the character of a long established estate developed over generations. Continue at an unhurried pace, with time for a French style picnic before returning to the vineyards. 

In the afternoon, visit a Grand Cru Classé château listed in the historic 1855 classification, that offers insight into Médoc’s prestigious wine traditions. Tim Cowley, a former professional rugby player from New Zealand, moved to Europe in 2003, originally planning to stay for just one year. Travel quickly became central to his life, and after retiring from rugby in 2012, he chose to focus on his passion for wine, travel, and French culture.

Bordeaux brought all of this together. With its nearby coastline, vast vineyard landscapes, outstanding wines, rich food culture, and deep historical roots, the region became the natural setting for his next chapter. In the South Sardinian countryside, far from crowds and rush, you step into a working textile atelier where time is measured in gestures: spinning, twisting, threading, and weaving. Slowly, by hand. The atelier is set inside a Sardinian medau, a rural homestead typical of the region and inhabited by many families.

The experience is an immersion into sea silk (byssus) and traditional weaving practices, guided by textile artist Arianna Pintus. Equally distinctive is her decision not to accumulate. Arianna does not produce stock, allowing the pace of making to remain aligned with the slow processes the materials require. This approach keeps the work intentionally slow and sustainable.
