This half-day private mosaic experience takes place in the studio of the bilingual muralist, Shannon McEvoy. Under Shannon's guidance, you will design and fabricate your own mosaic masterpiece to take home as a memento of your time in Chile.  From the Valle de la Luna in the Atacama Desert, to the colorful hills of Valparaiso, to the Villarrica Volcano in Pucon, to the rock formations of Torres del Paine National Park, Chile is filled with breathtaking landscapes that are gorgeous to mosaic.

Shannon will work with you to help you bring your vision to fruition. After the activity concludes, Shannon will grout your mosaic tile and help you to arrange the pick-up from her studio 48+ hours later. This experience invites you into the intimate studio of an artist in Santiago to create your own Chile-inspired mosaic artwork. This may be of an abstract style or inspired by Chilean landscapes. You may choose to collaborate with your travel partner and create one mosaic to take home, or create individual masterpieces.

Over the course of the workshop, you will learn the fundamentals of mosaic techniques as Shannon helps you assemble your artwork. As an artistic director, Shannon collaborates with Chilean muralists and champions the community aspect of creation—she believes that art is for everyone. During this activity, you'll have the opportunity to quiz Shannon about life as a bilingual expat artist in Chile, her current projects, and how you can bring more creativity into your life. This bilingual mosaic masterclass is the perfect opportunity to practice your Spanish and pick up some essential "Chilenismos" (Chilean slang) for your onward travels.

This experience takes place in Shannon's studio in Providencia, Santiago de Chile. The exact address to is provided after booking. If traveling by metro, take Line 1 and alight at either Pedro de Valdivia or Manuel Montt. It's a 15-minute walk to Shannon’s studio from either station. Shannon is a multimedia artist who loves exploring different languages and cultures, meeting new people, and listening to their stories. Originally from Minnesota, she studied abroad in Viña del Mar in 2010. The country and its people left a lasting impression on her, and she quickly returned after graduation. The street art of Valparaíso influenced her so profoundly that she incorporated Chilean muralism into her undergraduate Honors Thesis and pursued a career as a muralist.

Shannon has lived in Chile for over 10 years, where she teaches English and creates murals—but her talents don’t stop there. She also paints, sketches, makes ceramics and jewelry, designs her own clothes, and experiments with photography.

Shannon loves sharing her passions for art and language. To her, both are about expressing oneself and building meaningful connections. Bilingual in English and Spanish, she also speaks basic Portuguese.

Greece

Begin your day in Pyrgos, once the capital of Santorini, where winding alleys and whitewashed chapels unfold into views that stretch across the island. From this village perched on a hill, you’ll head to Megalochori, a lesser-known village carved into an ancient erosion bed. Here, cave dwellings and small artisan workshops offer a glimpse into everyday island life, layered with history and tradition.

The experience deepens with a live performance at Symposion, a cultural space set in a restored winery. Surrounded by mythological stories and the resonance of handmade ancient instruments, you’ll be immersed in a musical encounter that echoes the island’s distant past.

The day concludes back in Pyrgos with a relaxed farm lunch, where a local family prepares beautiful dishes made with ingredients nurtured by volcanic soil. A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

A calçotada is a food experience that is sociable, traditional, delicious, and playful. It’s about ritual, regional identity, rural air, fire, laughter, wine, and the earth that grew your food. The ritual of gathering friends for a gluttonous afternoon to eat them defines Catalan winter life in rural areas. While many gastronomic experiences offer tasting or cooking classes to visitors, few immerse you in a tradition still rooted in community and seasonality. 

In this private gathering, the owners will share how calçots are planted and harvested as leafless stalks. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Each evening, we wait for sunset to happen ... in fact the whole town stops whatever they are doing and gathers near the edges of the cliffs In Oia. 

It’s a ritual that we quickly make our own. We time our dinner, walks and activities so that we can get a prime seat to watch the performance. On the odd day that we miss it ... being on the wrong side of the caldera ... we feel we’ve missed a significant event in our day.

The setting sun can look rather different in a cloudless sky. Santorini rarely has a cloud. Maybe one every two days ... making the sunset even more glorious. Flaws build character.
