Japan

In juxtaposition to the prim and proper atmosphere of traditional Kyoto are the Tachinomi, casual bars invented for the Japanese blue and white-collar crowds to let their hair down. Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

Alcobaça and Traditional Lunch

The Monastery of Saint Mary of the Victory, also known as the Monastery of Batalha (“Battle”), was built in fulfillment of a vow by King John I—the first monarch of the Aviz Dynasty, Portugal’s second royal dynasty—to commemorate the Portuguese victory over the Castilians at the Battle of Aljubarrota in 1385, which secured Portugal's independence from Spain. It is considered the most significant example of Gothic architecture in Portugal.

Due to its artistic, cultural, and historical importance, the Monastery of Batalha was designated a UNESCO World Heritage Site.

Built by the Dominican Order, the monastery is a masterpiece of Gothic art in Portugal and reflects the stylistic evolution that took place over the two centuries of its construction. The complex is notable for its striking features of Flamboyant Gothic and Manueline styles. The experience is heightened by the light filtering through the stained-glass windows, casting colorful patterns on the bare stone walls of the church.

One of the highlights inside is the Chapel of the Founder (“Capela do Fundador”), the first royal pantheon built in Portugal. It houses the grand medieval tomb of King João I and Queen Philippa of Lancaster—depicted holding hands as a symbol of the strong alliance between Portugal and England—as well as the tomb of Prince Henry the Navigator. Adjacent to the church is the half-finished structure known as the “Unfinished Chapels” ("Capelas Imperfeitas"), commissioned by King Duarte of Portugal to serve as his royal mausoleum.

Monastery of Batalha

The Alcobaça Monastery is one of the most important religious buildings in medieval Portugal, closely linked to the birth of the kingdom and the first dynasty of Portuguese monarchs.

The monastery was established in the mid-12th century by Afonso Henriques, Portugal’s first king, as a gift to the Cistercian Order’s leader, Bernard of Clairvaux—one of the most powerful European figures of the time—in exchange for spiritual, economic, and political support.

Alcobaça was built according to Cistercian principles: simple, austere architectural lines, without interior decoration or images. Nevertheless, by the early 14th century, it had become the richest and most influential monastery in Portugal, largely due to the Cistercians’ innovations in agricultural technology and land management. The church and its surrounding structures are considered the best-preserved example of Cistercian architecture in Europe.

The church and monastery were the first Gothic buildings in Portugal. Construction of the complex was completed in the 13th century, although it received several later artistic additions in the Manueline and Baroque styles—such as the 16th-century cloisters and sacristy, and later, the 18th-century church towers, elaborate altarpieces, sculptures, and tile panels.

Inside the church are the unique Gothic tombs of King Pedro I and his mistress, Inês de Castro—central figures in a tragic love story that culminated in the murder of Inês by Pedro’s father, King Afonso IV.

Its historical and artistic significance was recognized in 1989, when it was designated a UNESCO World Heritage Site.

Monastery of Alcobaça

The 13th-century Monastery of Coz was occupied by Cistercian nuns and was one of the few female monasteries in Portugal, dependent on the nearby Alcobaça Monastery. Mostly destroyed after the extinction of religious orders in Portugal in 1834, the church—originally from the 16th century—is the only part of the monastery that has been preserved. It features rich Baroque decoration, including beautiful blue and white tile panels, gilded altars, a large carved and gilded grille, and painted wooden ceilings.

The first impression of the Monastery of Coz reveals a building that appears to be in ruins—particularly the surrounding cloisters—and the only remaining structure has a simple, austere façade. But once inside the church and sacristy, you'll experience an architectural journey through various artistic styles, materials, and techniques, reflecting what was once a rich and powerful community of nuns who worked with and supported the nearby (male) Monastery of Alcobaça.

The monastery is slowly being restored and remains one of the most overlooked and precious hidden gems in the region.

This experience begins inside San Bernardino alle Ossa, a church like no other in Milan. It holds one of the city’s most unsettling spaces: an ossuary chapel lined floor to ceiling with human bones, creating a space suspended between devotion and disquiet. Created in the 12th century to house the remains from the nearby hospital’s overflowing cemetery, it still evokes questions about death, ritual and memory.

From here, the walk unfolds through the surrounding streets near the Università Statale—an area layered with centuries of medicine, mysticism and intellectual life. You’ll move between old hospital courtyards, academic buildings and silent corners.

Erica shares the background of the ossuary, the district’s layered past, and the thin boundary between science and superstition. Emanuele guides your eye helping you notice the strange harmony of details that define this part of Milan—scholarly and occult, clinical and haunted, forever suspended between two ways of knowing.

Immerse yourself in the fragrant world of an aromatic and medicinal herbs farm nestled in the picturesque region of Alentejo, Portugal. This experience invites you to explore the sustainable practices of organic farming and gain insights into the use of Portuguese aromatic herbs. Then sit down for a multi-course lunch based on traditional Alentejo recipes under a shady ash tree or in the cozy greenhouse.

From starters to desserts, you’ll experience how herbs can reduce salt and sugar while enhancing aroma and flavor. It’s a chance to slow down, reconnect with nature, and experience the vital role herbs play in Alentejo’s cuisine, culture, and ecosystem.

The visit will begin by explaining the organic production method and the agricultural practices used in the farm. As visitors stroll by, they are invited to collect plants to smell and taste, whilst Rute talks about its medicinal properties and culinary uses. After touring the garden, we will visit the natural drying greenhouse, the plant processing room and finally the packaging and storage area. Then, the visitor will learn how to make a herbarium using the Cyanotype technique (or similar activity in winter). Afterwards, there will be a tasting in the middle of the field in a shady spot, of all the products produced on the farm. Fresh aromatic infusions, goat cheese from Alentejo with our endemic thyme (accompanied by our typical Alentejo bread), our honey, our Extra Virgin Olive Oil and our Penny royal or Lemon grass liqueurs.

Their efforts have revitalized the landscape, ensuring that each plant thrives in harmony within Alentejo’s rich biodiversity.

This experience offers a full immersion in the world of washi — Japanese handmade paper — woven into Kyoto’s architecture, rituals and daily life. For over a 1000 years, this humble material has carried story, structure and spirit across generations. Kyoto has long been a center of washi artistry, supplying paper to temples, palaces and traditional arts.

You’ll begin in the Kyoto Botanical Gardens, where you’ll learn about plants that form the base of washi and how the fibers are transformed by hand. From there, Emilie will guide you to artisan studios, offering a close look at traditional techniques and the lived artistry behind them.

Later, you’ll step inside a historic noble residence, where washi-lined walls and shoji screens show how paper softens light and defines space in Japanese design. The walk ends in a curated selection of shops in Demachiyanagi offering handmade washi — a way to see the best in the craft today, and an invitation to take home a piece of enduring culture.

Washi may be everywhere in Kyoto, but without context, it’s easy to overlook. Emilie, a researcher of traditional crafts, helps you see what’s hidden in plain sight — how paper threads through rituals, interiors, and craftsmanship. Her fluency in the language, culture, and material open doors you wouldn’t even know to knock on, translating not just words but values, processes, and small gestures. What might seem decorative becomes, with her insight, a story of continuity—one that connects you to the deeper logic of Kyoto’s design and tradition.

Having a background in biology, coming to the Galapagos was absolutely a bucket list trip. The trip is worth going if you have three to seven days, depending on how much you want to see. I was there for three days and I could have discovered more islands. 

It is important to have a tour guide as you are not allowed to venture outside the town without one. 

Definitely worth a visit!

Matala Caves and Beach

For centuries, the Ponte Vecchio has captivated visitors with its unique array of jewelry shops. Meanwhile, Piazza della Signoria has remained the political heart of Florence, hosting significant events and showcasing monumental art and architecture. Things to look for:
1 - Ponte Vecchio's Timeless Appeal: This medieval stone bridge has spanned Florence's Arno River for almost 700 years. Its three shallow arches support a row of shops, creating a stunning reflection over the waters. The bridge has withstood floods, wars, and the passage of time, serving as a merchant's stage and a site of historical events, including the tragic murder of Buondelmonte de’ Buondelmonti in 1216, which fueled the feud between the Guelphs and Ghibellines​​. Today, the Ponte Vecchio is renowned for its fine jewelry stores and other offerings.

2 - Transformation Through Time: Initially, the Ponte Vecchio housed various trades, but by 1422, the Guild of Butchers monopolized the shops, turning the bridge into a market for meat, leather, and fish. This setup continued until the Medici era when Cosimo I de Medici, seeking to elevate the bridge's status, replaced the butchers with gold merchants, a tradition that endures to this day​​.

3 - A Political and Cultural Hub: Since the 14th century, Piazza della Signoria has been the focal point of Florentine political and social life. It houses the imposing Palazzo Vecchio, Neptune Fountain, and Loggia dei Lanzi, among other significant landmarks. 

4 - Symbolism and Artistry: Piazza della Signoria features several iconic sculptures, including a copy of Michelangelo's David, marking its original location. The Neptune Fountain, built to celebrate a Medici wedding, represents the family's ascent to power. The Loggia dei Lanzi, a fine example of Florentine Gothic architecture, displays notable sculptures like Benvenuto Cellini's "Perseus" and served as a stage for official ceremonies during the Republic era​​​​​​​​​​​​.
