With only 231 olive trees, João’s farm has been in the family for three generations, but it was only in 2015 that he started producing olive oil. João's grandfather planted most olive trees, but some have been here for thousands of years. Unlike the super-intensive olive groves common in the area, João's traditional approach relies solely on rainwater and eschews chemical use. This experience delves into the rich history of the farm and the meticulous process of olive oil production. You'll witness unique grafting techniques that allow different olive varieties to grow from a single tree. The experience includes learning the art and science of olive oil tasting, understanding the nuances between northern and southern Portuguese olive oils, and savoring a lunch that features regional products and wines from local producers that João knows personally.
