Although historically popular in working-class areas of Osaka, tachinomi have more recently appeared around Kyoto, some with a twist of the local culture ingrained in their Osaka roots.

Your experience begins with your expert guide giving you a primer on the history and evolution of tachinomi standing bars in the Kansai area, as well as some tips on how to fit in with the locals. From there, he will take you to some of his favorite tachinomi, from rooftop cocktail bars to racous hole-in-the-wall establishments, introducing you to patrons, staff, and owners alike.

On the first half-day, you’ll learn about the ancestral art of sourdough breadmaking, delving into the significance of wheat in ancient Greece and its connection to Demeter. Hosted by an architect, this full-day excursion analyzes Santiago’s preserved pre-colonial grid and the strategic placement of a city within a natural basin. You'll see the cathedral, Plaza de Armas, and a network of covered pedestrian galleries cutting through the city blocks, while discussing the eclecticism of the historic downtown. Diego Baloian is an architect holding a degree from the Universidad Finis Terrae and a Master's in Cultural Heritage from the Pontificia Universidad Católica de Chile (PUC). As the founding partner at DBG Architecture and Massantiago, his work focuses on architectural design, the restoration of heritage buildings, and urban planning. You’ll explore the origins of photography and learn about wet plate collodion—a 19th-century technique that uses glass or metal plates, chemical baths, and a large format camera. Pierre will demonstrate each step while coating, sensitizing, exposing, and developing images.

Watching your portrait come to life is a striking visual moment: deep contrasts, delicate textures, and a vintage feel that’s hard to find elsewhere. While your image slowly appears, Pierre shares family stories and his personal view of Bordeaux and photography. If the light conditions are good, you can choose to shoot outdoors and include a glimpse of the city in your portrait.



The uniqueness of this experience lies in the physicality of the process and the one-of-a-kind result. Wet plate collodion photography doesn’t aim to imitate the past—it uses an early technique to craft images that are singular, dense, and deeply present. Pierre Wetzel is a Bordeaux-based photographer known for his dedication to wet plate collodion, a 19th-century photographic process that he has mastered over years of experimentation. He lives and works in the Saint-Michel district, where he runs his studio and regularly collaborates on community-based art projects that connect photography with local stories and social engagement.

This Jun-Sep experience explores Didyma after dark, when the Temple of Apollo opens for night museum hours and the site is illuminated. Departing from Izmir (or Kuşadası) or Bodrum around 16:30, you travel by private vehicle for 90 min to Didim for an early dinner — simple dishes timed to fit the schedule — while your host frames the myths and history you’re about to see. 

From 19:30–21:30, you enter the sanctuary and walk through one of antiquity’s most imposing Ionic temples which Strabo, the Ancient Greek geographer once described as a “temple within a forest of columns.” 

Hatice — a licensed guide, storyteller and culture expert — walks you through the colossal Ionic plan, unfinished cella enclosure, Medusa reliefs, column drums and bases and the Sacred Way that once linked Didyma to Miletus. Eclairs, ratatouille, fromage – mhmm, so yummy – paired with a glass of wine and pleasant company, a French cooking class is a trip for all the senses (and fun, too). We opted for a private cooking class in Paris with Léo, a chef who has cooked in several top restaurants throughout his life. 

The first dish we learned how to cook was a French cheese plate and handmade bread accompanied by filled vine leaves. After that, we learned about French cuisine, the main ingredients, preparation methods, history, and drank some more wine. We learned what ingredients make the French kitchen unique (wine, vinegar, and cheese) and made a delicious ratatouille, one of France's most popular vegetable dishes. 

We read you can also do these courses online, but you have to get the ingredients and tools beforehand. A good option for digital visitors!

1. The Filopappos Monument, a majestic Roman structure, crowns the hill, paying tribute to a benefactor of Athens and offering a historical highlight amidst the natural setting. 
2. The breathtaking views of the Acropolis, the Parthenon, and the cityscape are among the best in Athens, especially at sunrise or sunset. 
3. Archaeological and historical sites, such as the ancient Prison of Socrates, add layers of intrigue and discovery to your visit. 
4. The peaceful walking trails, surrounded by pine trees and Mediterranean flora, create an ideal setting for a leisurely hike or a quiet escape from the city’s bustle.

Australia

The best thing about visiting Australia is that scenic views and spectacular nature are just a stone's throw away, no matter where you are. If you're in Sydney, you won't get a better view of the ocean than walking through Royal National Park and taking Bundeena Drive to Marley Walk.

Passing through scenic heathland with small trees, you'll soon come to a bushwalk through a denser forest. We saw many native bird species, including the famous cockatoo, had a dip in one of the pools along the way, and took stunning sunset photos as you look out over the wild ocean. The tourist highlight is Wedding Cake Rock, but our personal star was Marley Beach, a dreamy, hidden sandy beach where you can relax and dip your feet in the refreshing water.

You can rent a car and drive directly to Bundeena, but we decided to take the train from Sydney to Cronulla and from there take the ferry to Bundeena.

Our plan: To walk through the magnificent Quiraing and climb to the base of the Needle, a 120 ft jagged pinnacle, for views of the Outer Hebrides.

Highlights from the photo-hike: ☀️Awe-inspiring view of Loch Cleat (above). 💦 Scrambling over the steep cliffs on springy heather. 🐾 Checking out the structures that have been named — The Needle, The Prison, The Table — and naming those that haven’t. ⚡️Noting the exact moment when the weather turns on us. ❄️ Getting shrouded in mist and fog, and unwittingly playing hide-and-seek at the top of the ridge (this is, after all, where locals hid their sheep from raiding Vikings). 💨 Howling winds over 50 mph trying to gust us off the slopes. 💧Rain coming down in full force. ☁️ Feeling my spine tingle as clouds swirl around me in this unreal landscape.

Cinematic Drama

Plaça Espanya is one of Barcelona’s most iconic squares, serving as a gateway to Montjuïc and many of the city’s cultural landmarks. With its grand fountains, historical architecture, and lively atmosphere, it’s both a transportation hub and a tourist attraction in its own right.
1. The Magic Fountain of Montjuïc hosts stunning light and music shows in the evenings.
2. The former bullring, Arenas de Barcelona, has been converted into a shopping center with panoramic rooftop views.
3. The square is surrounded by impressive architecture, including the Venetian Towers.
4. It’s the starting point for exploring Montjuïc’s attractions, such as the National Art Museum of Catalonia.
5. The nearby Parc de Joan Miró offers a quieter space to relax with views of the square.

Jamaica

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

The historical Tavira, a captivating town in the Algarve region of Portugal, was one of the first Phoenician settlements in the Iberian West. Tavira's unique blend of historical influences, from its Moorish occupation to the Christian reconquest, has left a rich architectural and cultural legacy. Top 5 highlights:
- Tavira was a significant Moorish stronghold from the 8th to the 13th centuries. The town still reflects this era with its whitewashed buildings, distinctive Moorish-style doors, and rooftops. Visit the Tavira Castle, originally built by the Moors, and the historic Roman bridge, which was later determined to be a Moorish bridge from the 12th century.
- Discover the dramatic history of Tavira's reconquest in 1242 by Dom Paio Peres Correia. This pivotal event marked the town's transition from Moorish to Christian rule. Explore the Santa Maria do Castelo Church, built on the site of a former mosque, which now houses the tombs of Dom Paio and his knights.
- Learn about the devastating impact of the 1755 Lisbon earthquake on Tavira. The town, like much of the Algarve, was significantly damaged, leading to a rebuilding effort that resulted in many of the fine 18th-century buildings you see today.
- Tavira boasts an array of architectural treasures, including 37 churches. The Church of Santa Maria do Castelo, with its Gothic origins and Manueline additions, and the Renaissance-style Igreja da Misericórdia are notable examples of the town's diverse architectural heritage.
- Enjoy the serene beauty of Tavira's natural surroundings. The town is located along the River Gilão and near the Ria Formosa natural park. 
Tavira's historic center is best explored on foot. The town's economy has shifted from fishing to tourism, but it has maintained its traditional charm, avoiding the high-rise development seen in other parts of the Algarve.

Alsancak is one of İzmir’s liveliest districts, where historic charm meets modern entertainment. Its narrow streets are lined with well-preserved buildings, trendy cafes, and boutique shops, creating a perfect blend of culture and modernity. As night falls, the area comes alive with music, laughter, and the hum of a vibrant nightlife scene.

Spend part of a morning visiting War Photo Limited, one of Dubrovnik's most thought-provoking and impactful sites.

Located in the heart of the old town, War Photo Limited is a unique gallery dedicated to war photography. The gallery features powerful exhibitions that document the realities of conflict from around the world. Each collection, curated by renowned photographers, offers a compelling narrative that goes beyond the headlines to capture the human side of war.

As you walk through the gallery, you'll encounter striking images that evoke a range of emotions, from sorrow and anger to resilience and hope. The exhibits are designed to provoke thought and discussion, encouraging visitors to reflect on the impact of war and the importance of peace.

A visit to War Photo Limited typically takes about an hour, allowing ample time to absorb and reflect on the powerful stories presented. This experience offers a stark and poignant contrast to Dubrovnik's historic and architectural beauty, providing a deeper understanding of the complexities of the human experience.

Faroe Islands

I’m seduced by the untouched beauty and drama of the Faroe Islands. Driving into Tórshavn, I witness a rare Faroese sight.

The ocean is bright red. The beach is packed with onlookers. It’s a grindadráp, a pilot whale hunt. Heavily regulated, it’s being carried out with process perfected over millennia. A local couple points out their son to me, he is on one of the boats — “unless we send a boat, we won’t get our share of the whale meat.”

When a school of pilot whales is sighted, boats gather around and slowly drive them towards the chosen bay or beach, for it’s illegal to kill the whales in the open sea. This time, there are about two hundred of them. Every bit of them will be consumed or used — and none can be sold.

I’m shocked, outraged, fascinated, caught up in the excitement and terribly conflicted. As a traveler, I respect — and seek to understand — culture and tradition. And the Faroese are holding on to this one — as it symbolizes for them their relationship with the sea.

How Not to be Templed Out.

Pick out the must-see’s in the mini-circuit (Bayon, Angkor Wat and Ta Prohm in that order), then pick two temples in the grand-circuit (Preah Khan and Pre-Rup are my favorites), and one that requires a car (Banteay Srei or Beng Melea). 

Add some climbing at dawn - at Phnom Krom and Phnom Bakheng - as the sunrises here will sustain you for a whole year of waking up late. 

Pace yourself over three to four days.

Temples and Temples

In Lisbon's historic Belém district, the Mosteiro dos Jerónimos stands as a monumental testimony to Portugal's Age of Discovery.
