The old Spanish saying “Put me in the sun and give me wine and ham!” reveals just how deeply Iberian ham is woven into the country’s diet and culture. These rich, paper-thin slices of cured pork are a tapas essential — but there’s far more to them than meets the eye.

In this experience, you’ll discover that ham carving isn’t just a technique — it’s an art form, practiced with care and reverence. At a family-run business, master carvers will demonstrate how each cut affects the flavor, texture, and aroma. As they work with precision and passion, they’ll explain the different parts of the ham and the history and tradition behind it.

Your expert host will explain why true Iberian ham can only be produced in Spain, highlight its distinctive characteristics, and explore the different quality levels, from natural grain-fed ham to the prized 100% Iberian acorn-fed ham — and why each deserves its place on the plate.

This experience takes place in a family business in Madrid’s historic Austrias neighborhood. It’s run by the third generation of the Arroyo family, whose grandfather founded the business 65 years ago. They still source their jamón ibérico from the same farms — small producers who raise black Iberian pigs on oak-covered dehesa. The slow, natural process gives the ham its marbled texture and depth of flavor. 

Iberian ham has been part of Spanish culinary tradition for over 2,000 years. In this experience, you’ll learn how the carving itself becomes a craft — it takes years to learn how to follow the grain, anticipate the cut, and honor every part of the ham.

Chile

Co-hosted by a local couple with a combined 20 years of experience in astro-tourism, this astronomy experience takes place beneath some of the clearest night skies in the world in a boutique observatory installed at a private residence on the outskirts of San Pedro de Atacama. Comfort is of utmost priority: you will first be seated in a cozy lounge where Juan Pablo will devote 30 minutes to the fundamentals of astronomy. After warming up over hot beverages and local liqueur, you will be ushered outside to the telescope area and invited to survey the night sky for celestial objects with Valeria.

This observatory contains two state-of-the-art Dobsonian Telescopes (16' and 12'), which enable you to see planets, star clusters, nebulae, and galaxies. Valeria will demonstrate how to use the telescopes and point out a variety of celestial objects over the course of the session—note that items spotted is dependent on the conditions/season. Hammock chairs are provided for maximum comfort!

This is an intuitive and highly personalized stargazing experience hosted by a bilingual local couple. Valeria and Juan Pablo wouldn't dream of relying on a script. Besides being experts in regional astronomy and ecosystems, your hosts know to read the room; they will tune in with your level of knowledge and adapt the activity accordingly. For budding skywatchers who have never seen a telescope, this is your opportunity to pose those lingering questions you may feel shy to ask in a large, shared tour. Seasoned stargazers can improve their understanding and sharpen their technical ability in a private observatory setting.

Valeria and Juan Pablo dedicate the entire session to sharing knowledge, wisdom, and passion for the night sky. Their commentary leans towards modern cosmology and scientific discovery; winter sessions include more discussion of the Andean worldview and Indigenous practices. This experience is co-hosted by Valeria Heindl and Juan Pablo Rivas. Valeria is a passionate naturalist and conservationist who has resided in San Pedro de Atacama for over a decade. While operating her tour business, she has fostered deep roots in the community. Her expertise lies in the region's natural history, from its intricate geology and flora to wildlife (in particular, its avifauna), to its astronomy. She worked as a senior astronomy guide at the largest privately-owned observatory in San Pedro for five years before developing this astronomy venture with her husband, who has worked as an astronomy guide for over 15 years.  Juan Pablo now runs his own adventure tourism company in town.

Mexico

This day-long experience takes you into the volcanic valleys west of Guadalajara, in the shadow of the Tequila Volcano, a UNESCO World Heritage site. You’ll travel by private vehicle to the Guachimontones archaeological site, home to Mexico’s only circular pyramids — ceremonial structures built over 2,000 years ago by the Teuchitlán culture. After a traditional lunch in the Jalisco countryside, you’ll take part in a hands-on obsidian workshop. Adeline Verspieren is a licensed guide based in Paris. She was born and grew up in the Upper Marais, a creative, trendy, and historic district of the city, and now lives near Parc Monceau, where she chose to raise her three children.

She holds a master’s degree in 18th-century French history from the Sorbonne, focusing her studies on the Grand Tour, an aristocratic rite of passage. She has worked in tourism since 2010, guiding travelers from around the world through Paris.

Alongside her work as a guide, she has a strong personal interest in the arts, including music, exhibitions, theater, opera, and cinema, reflecting a broader curiosity and openness to cultural exchange. This same attitude extends to hospitality: over the years, she has welcomed people in different ways, both by guiding them through the city and by hosting travelers in her own space in the Marais.

This full-day tour introduces you to the cultural heritage of Chile’s Atacama Desert, the world's driest non-polar desert where landscapes comprise volcanoes, salt flats, geysers, and lagoons. Hosted by Mirko, a bilingual guide, you will venture into remote valleys to learn about the Atacameños (the "people of the region") and explore a little-known archaeological site. The purpose is to connect with the local community and understand how the people of the Atacama have adapted to this demanding yet beautiful environment.

The morning is spent with a community where many individuals hail from the Lickanantay ethnic group. You will walk alongside llama herders while hearing tales about ancient Andean life and how the worldview is upheld. Next, you will oversee a clay-making workshop before dining on a lunch typical of this region. The afternoon is spent at the Tulor Archaeological Site, learning about of the architecture, society, and life of the early Atacameños.

The experience is a rare access invitation to connect with the people who descend from a 10,000-year-old culture steeped in agriculture, animal husbandry, and the cosmos. Once a semi-nomadic tribe, this civilization adapted over the years and developed advanced agricultural techniques.

Mirko first invites you to participate in the typical day of the Lickanantay people by joining a llama herder on a mindful walk during which they'll share stories about their lifestyle. By observing the molding and firing of clay, you'll hear how a connection is forged between people and land. You'll try it for yourself and take away a piece of worked clay. 

After dining on a lunch of quinoa, corn, pataska, and herbs from the highlands, it's time for the history lesson you wish you'd had at school. Predating the Incas, the Tulor Archaeological Site is one of the oldest pre-Columbian sites in the Americas. As you walk amid the adobe ruins, Mirko will explain evidence of social organization and rituals.

Meet your host, Eric, at the first venue of your multi-course experience. After learning about seasonal ingredients, enjoy your first course of seasonal dishes and become familiar with the type of sake that goes best with it.
After a relaxing time at the first venue, Eric will lead you to another of his favorite restaurants  to sample more seasonal dishes in another chic location, again paired with Japanese sake.

Throughout the evening, Eric shares fascinating and useful information about Kyoto cuisine which will add to your dining experience through your stay in the city. The seasonal menu changes around May/June and Oct/Nov; enjoy a completely different experience at least twice a year.

Morocco

The trek to Toubkal Summit is a two-day challenging climb through Morocco's High Atlas Mountains, starting from the village of Imlil. This journey is renowned for its physical demands and for the cultural immersion and stunning natural beauty. 

You will ascend the trail through diverse landscapes, including lush valleys and rocky terrains, culminating at Toubkal Refuge for an overnight stay. 

The final push to the summit offers breathtaking panoramic views stretching from the Marrakech plains to the vast expanse of the Sahara. The climb, while strenuous due to the rapid altitude gain, is achievable for those with good fitness and provides an exhilarating sense of accomplishment. 

The trek includes an overnight stay at the Toubkal Refuge area, where you’ll be accommodated in a private/double room with ensuite bath. This upgrade from the standard dormitory offers more comfort and quiet ahead of summit day.

After an early breakfast, we’ll set off for the summit of Toubkal, nearly 1000m above us. Technically this is not a difficult ascent, but it is demanding with sections of scrambling and loose scree – depending on fitness a climb of 3 or 4 hours. The views from the top are worth it though looking out into the plain of Marrakech and the Sahara.

Day 2 of the summit experience is demanding, with 8-9 hours of trekking in total across the full day.

The summit of Toubkal offers extensive views over the Atlas Mountains and the desert, a reward well worth the climb’s challenge.


Toubkal Refuge to Summit

The trek starts in Imlil, traversing lush landscapes to reach the pilgrimage site of Sidi Chamarouch. Here we will have a picnic lunch, before continuing up the mule trail to the Toubkal refuge.

While Sidi Chamarouch’s shrine remains a spiritual site closed to non-Muslims, its market and cafes welcome all, providing a blend of spiritual and local commerce.

The path from Sidi Chamarouch to the Toubkal Refuge is a steep climb, taking you through increasingly barren yet striking mountain scenery. 

After a full day of ascent, you’ll reach the Toubkal Refuge—your base at 3,200 meters before summit day. Here, you’ll settle into a private/double room, and enjoy a proper dinner to refuel and acclimatize for the climb ahead.

Most trekkers sleep in dorm-style bunk rooms with shared bathrooms at the Toubkal Refuge, often alongside 10–20 others—conditions that don’t support privacy, comfort, or restful sleep. In contrast, this experience includes a private / double room shared only within your group, based on your preference, each with an ensuite bathroom. It’s a quieter, more restorative way to spend the night at altitude. Keep in mind, however, that these are simple and modest rooms. In rare situations when all private rooms are booked out, Ahmed will arrange private/double tents for your party -- these are comfortable, safe and provide a peaceful night's sleep (in this case, the bathrooms at the refuge will be used.)

Meals are freshly prepared and more generous than the standard dorm fare, with a focus on nourishment and recovery.

Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

It’s Halloween time in Beacon Hill in Boston. After much consideration, I decide that I am too old to collect candy from my generous neighbors.

So I pick up my camera instead and wander through Boston’s most historic neighborhood to celebrate its annual Halloween tradition.

.. with costumed pets and people, infants dressed as pumpkins to the elderly dressed in traditional witching gear.

I run into a friend dressed up as Jamie Lannister from the Game of Thrones, complete with chopped arm hanging around his neck.

Beacon Hill has the perfect Halloween atmosphere with the wrought iron, cobblestones, narrow alleys and seriously all-out decoration.

So, trick or treat?

In Santorini, we discover and fall in love with Vinsanto, the local dessert wine. So we drive up to Hatzidakis - a charming and intimate local winery - to check out the local grapes. The vines grow low to the ground and close to the road and we almost drive into them while looking for parking. 

The grapes are grown in an unusual way, not in arbors but low to the ground, in baskets made of vine stalks themselves. They are organic and are watered mostly by dew as the island has low water supply.

The tasting room is cave-like and we take home several bottkes of the small batch Vinsanto they produce.

The Navigli Canals

Trieste, Italy, is home to the awe-inspiring Grotta Gigante, one of the largest accessible caves in the world. Hidden beneath the rugged Karst Plateau, this natural wonder boasts a colossal underground chamber measuring 98 meters high, 76 meters wide, and 167 meters long. The sheer size and grandeur of the cave make it a paradise for geology lovers, adventurers, and photographers alike. With its dramatic stalactites, towering stalagmites, and mesmerizing rock formations, Grotta Gigante offers a breathtaking journey into the depths of the Earth.

1. Inside the cave, an enormous underground hall creates a jaw-dropping spectacle, with cathedral-like dimensions that earned Grotta Gigante a spot in the Guinness World Records as the largest show cave in the world open to tourists.

2. Stunning stalactites and stalagmites, formed over millions of years, decorate the cave, some reaching several meters in height. The eerie, otherworldly formations make for incredible photography.

3. A well-lit path with 500 steps takes visitors deep into the cave, providing a close-up look at unique rock formations and underground geological features. The guided tour offers fascinating insights into the cave’s formation and history.

4. Hidden inside the cave, scientific instruments monitor underground movements as part of international geophysical research, making Grotta Gigante not just a natural wonder but also an important site for studying Earth’s seismic activity.

Grotta Gigante

So amid the current situation of the world myself and two other friends managed to score flights to Colorado for $47. We rented a Jeep and decided to travel all around Colorado. This was my first time ever out west as I am an eastern girl! 

If you are ever able to visit Maroon Bells please do! Preferably at night so that you can watch the sun set over the mountain top! The sound coming from the small river combined with the smell of fresh air made me want to pitch a tent and never leave! The weather was not as cold as I expected. I was hoping to see more wild life but besides a few ducks there was none. I still had a fantastic time.

Philly Girl Out West

If you want to explore Spain on foot, you should definitely set out on one of the pilgrimage routes through the country. All routes lead to the Cathedral of Santiago de Compostela in Galicia, which is located in the northwest. As a UNESCO World Heritage Site, the Camino de Santiago has been named a central point of cultural exchange – and a historical highlight that shows what medieval Spain looked like. We chose to follow the famous Camino Frances. The original 800km route takes 5 weeks, but we decided to get in a little later, we only had 11 days, and opted for the route starting in the Galician town of Sarria. Along the way, you'll meet many other tourist pilgrims, but you'll also be able to immerse yourself in the local culture and taste Spain's best delicacies (tapas, seafood, and Spanish Serrano ham). Be prepared for a lot of walking – and take the best walking boots you have. We’ve enjoyed every minute, but some people we met had the wrong equipment, complaining about blisters.

The “French” pilgrimage route

The Accademia Gallery in Florence, renowned for housing Michelangelo's David, is a treasure trove of art, history, and culture. As the second most visited museum in Florence, it offers a collection that includes a $16 million dollar violin and significant works of the Renaissance and beyond​​. Go on a journey of discovery through various art periods, techniques, and cultural histories. Here are our top recommendations:

1 -  As the focal point of the Accademia, Michelangelo’s David is a representation of strength, beauty, and human achievement. Created from a single block of marble, this masterpiece symbolizes the Renaissance ideals of humanism and is renowned for its anatomical precision and the portrayal of David before his battle with Goliath.

2 - The Hall of Prisoners features unfinished works by Michelangelo, known as "Prisoners" or "Slaves". These sculptures were intended for the tomb of Pope Julius II but were never completed. They offer a unique insight into Michelangelo's process, where the figures seem to be struggling to free themselves from the marble, embodying the concept of the "unfinished" in art​​​​.

3 - The Gipsoteca is a collection of plaster casts by the 19th-century sculptor Lorenzo Bartolini. This room showcases the creative process of sculpting, with numerous busts and models used by Bartolini and his students. The Gipsoteca represents the transition from idea to finished artwork, providing a behind-the-scenes look at the sculptor's workshop​​​​.

4 - The Florentine Gothic Gallery spans three rooms, focusing on art from the 13th and 14th centuries. It features Gothic altarpieces adorned with gold, reflecting the religious fervor of the Middle Ages.

Syntagma Square

Valencia, Spain, is home to Albufera Natural Park, a stunning wetland reserve just 10 km (6 miles) south of the city. This vast freshwater lagoon, surrounded by rice fields and wildlife-rich marshlands, is the birthplace of paella and a haven for birdwatchers, nature lovers, and photographers. A visit to Albufera offers a chance to experience Valencia’s traditional fishing villages, serene boat rides, and breathtaking sunsets, making it a perfect escape from the urban bustle.

1. The Albufera Lagoon, one of Spain’s largest wetlands, is home to a diverse range of wildlife, including flamingos, herons, and other migratory birds, making it a paradise for birdwatchers.

2. Traditional boat rides on wooden fishing boats (albuferencs) offer a peaceful way to explore the lagoon and enjoy its mirror-like waters reflecting the sky.

Albufera Natural Park

Chile’s Laguna Cejar, located in the heart of the Atacama Desert, is a stunning saltwater lagoon where visitors can experience the unique sensation of floating effortlessly due to its high salt concentration, similar to the Dead Sea. Situated about 20 km (12 miles) from San Pedro de Atacama, this turquoise lagoon, surrounded by a stark white salt crust and the majestic Andes Mountains, offers an unforgettable natural experience and breathtaking photography opportunities.

1. Float effortlessly in the lagoon’s mineral-rich waters, known for their extreme buoyancy due to a salt concentration of over 40%.
