Hosted in his intimate restaurant, Chef Toshihiko Yamamoto will explain the history and importance of dashi in Japanese cooking while together, you prepare a fresh batch of dashi to use for an exquisite meal. You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. Florencia Campos Correa, or Flor, is a Chilean-Spanish textile designer and author based in Santiago. Her business, Ullvuna, is dedicated to portable pin loom weaving kits which are available globally. Much of Flor's inspiration comes from her passion and appreciation for Chilean culture and people. She deeply admires the landscapes and nature as well as the ancient fables she absorbed as a child while traveling every corner of Chile by caravan with her family.

Flor has authored several books packed with vibrant pattern inspiration and projects. Her nature motifs are translated into floral crochet designs published in a British magazine and she has penned a children's story which inspires creativity and entrepreneurship in the youngest of budding designers. 

While Zen Buddhism arrived in Japan in the 13th century, it wasn't until the 15th century in the then-capital of Kyoto that it truly flourished, permeating many aspects of Japanese culture and expanding into numerous influential temples. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

Initially a medieval fortress, it now boasts the Renaissance grandeur of the Salone dei Cinquecento. A living testament to the city's political, artistic, and architectural evolution. Top reasons to visit:
1- The construction of Palazzo Vecchio, attributed to Arnolfo di Cambio, began in 1299. Built over the ruins of the Uberti Ghibelline towers and atop a Roman theater, the palace exemplifies the triumph of the Guelph faction. It has served as the seat of the city council, composed of the Guilds of Florence, and even housed Duke Walter VI of Brienne. The architectural design, initially severe and medieval, concealed sumptuous halls and residential apartments​​.
2 - Created during the Republic of Fra' Girolamo Savonarola in 1494, the Salone dei Cinquecento is the most significant room in Palazzo Vecchio. Originally basic and almost devoid of decoration, it was later chosen by Piero Soderini for grand murals by Leonardo da Vinci and Michelangelo Buonarroti, depicting the Republic's victories. Although these works were never completed, their initiation marked a high point in Renaissance art. When the Medici returned to power in 1540, they transformed the Salone into a symbol of ducal authority. Giorgio Vasari was tasked with its renovation, elevating the ceiling and adding a coffered structure with forty-two panels. The room's decor glorified the Medici family, replacing the original allegory of Florence with a depiction of Duke Cosimo himself​​​​​​.

It’s a 16th-century edifice that serves as a living museum, showcasing the grandeur of Sevillian nobility. Today, it remains a semi-private residence, partly inhabited by the 18th Duchess of Medinaceli and her family. Here are the Top things to check out:
1. Enter through a Renaissance-style marble gate to discover a courtyard adorned with a collection of busts from Roman emperors to Spanish kings, set against the backdrop of exquisite azulejo tiles.
