Take the 9:15am train from Madrid Atocha to Toledo station, where Adolfo will meet you. It takes 35 minutes and costs €14. You can pre-buy the train tickets from Renfe.com, or give yourself plenty of time to buy a ticket at Atocha.

Morocco

This is a moderately challenging private trek to the revered Muslim shrine of Sidi Chamarouch, starting from Imlil. This trek takes you through the traditional village of Aremd and ascends to 2350m (7710ft) at Sidi Chamarouch, positioned by a picturesque waterfall. 

While the shrine itself is not accessible to non-Muslims, the area around it offers a peaceful reflective spot for a picnic and stunning views across the Atlas Mountains and up towards the summit of Toubkal. Overall, the Sidi Chamarouch trek offers a profound glimpse into the Amazigh (Berber) spirituality, providing visitors with a deeper understanding of the region’s cultural tapestry.  

On this trek, you'll follow the same scenic route both to and from Sidi Chamarouch as it's part of the trail leading to the Toubkal Summit. Japan

This exploration of three lesser-known, evocative temple gardens in Kyoto offers a deep understanding of Japanese dry landscape design — where every stone, every line of raked gravel, carries meaning. Led by certified garden designer and author Ayumi Ikushima, the experience opens a thoughtful path into the philosophy and form of Zen gardens.

You’ll begin at the Crane and Turtle Garden where Ayumi introduces the foundational principles of Japanese garden design: symbolism, placement, interplay between nature and intention. 

A short walk takes you to a second temple where the garden reflects nature in miniature — a landscape composed to invite observation. You’ll learn to see and photograph the space mindfully.

Your final stop is a larger temple with a modern take on the tradition. A resident monk leads a meditation in view of the garden, offering how stillness and landscape are meant to interact. Then, you'll sit with Ayumi over tea and seasonal sweets to reflect and ask questions.

Many of Kyoto’s most famous temples now draw crowds so dense they verge on the tourist-trap, where authenticity gives way to speed and spectacle. This demanding trek spans a total climb of 2500 meters (8,202 feet) to 3207 meters (10,522 feet) at the refuge, suitable for those with good fitness levels but does not require technical climbing skills. 

The trek passes the spiritual landmark of Sidi Chamarouch, a Muslim pilgrimage spot located in a very scenic place, before the steep climb to the refuge, set just below the summit of Mount Toubkal. Far from the elaborate kaiseki meals that can be prepared only by chefs who have spent years honing their skills, Mami, a local chef and pâtissier, guides you in creating a simple yet heartfelt meal that you can learn to prepare in your own home using local, seasonal ingredients. The dishes include a vegetable dish, a fish dish, and a sushi; the actual ingredients will change with the seasons.

Set in a stylish century-old liquor shop, you’ll also enjoy several types of Japanese sake that will be paired with each course. As the entire experience is conducted only in Japanese, your host Eric, using his own background as a Kyoto-based chef, will explain the details throughout your time here. Traditionally used to decorate manuscripts, textiles, and ceramics, Ebru has been cherished in Turkey since the Ottoman era, blending artistic expression with meditative practice.

Set in a tranquil Istanbul gallery, this hands-on session begins with an introduction to Ebru’s rich history and cultural significance. You’ll observe a live demonstration by a master artist, learning the techniques of working with fabric—how to prepare the base, control the pigments, and create balanced, flowing designs. Using natural earth pigments, you’ll craft a vibrant scarf, watching colors float, swirl, and settle into intricate shapes before being transferred onto fabric. By the end of the session, you’ll take home a unique wearable piece of Turkish heritage.

Unlike traditional paper marbling, this experience explores the delicate and complex process of marbling on fabric, a technique requiring precision, patience, and expert guidance. Her passion for preserving Turkish marbling has led her to explore its many forms, from bookbinding to fabric design. She has perfected the intricate process of transferring Ebru onto textiles, creating wearable and decorative artworks that honor this historic craft. Rome’s Power Plant to Museum

Faroe Islands

Getting there on a little ferry tossed around on the surging Atlantic Ocean needs courage. As the boat uses all her resources to maneuver into a tight, rocky harbor, I wonder if the captain, who does this twice a day, is either extremely brave or completely suicidal. We step on to what looks like the sets of a Disney fantasy movie. Twenty colorful grass-roofed homes, one little schoolhouse - which has one child - and a bridge over the Atlantic.

I meet my guide Harald - a septuagenarian with poise to rival the curious sheep we see hanging precariously over the cliffs. Harald leads our little group on a 4-hour hike across the island to the lighthouse at the westernmost point of the Faroes.

Birds are everywhere - puffins, fulmars, kittiwakes, gannets - on the green hills, riding the ocean waves, occupying every inch of cliff space, filling the air with their calls, and circling the sky.
