Upon meeting your host, Carlos, you will cruise your way around a string of bakeries, markets, restaurants, and ice cream parlors with tastings in each location. Carlos has cherry-picked his favorite places to eat and imbues his excursion with cultural commentary and personal tales from his own experiences working in restaurants alongside his father, a prolific Argentine chef. The experience is designed as a walking tour with each food stop bookended by dipping into the plazas, parks, street art, and boutiques of Palermo. Needless to say, a healthy appetite is a must!

This culinary jaunt around the Palermo Soho barrio is an authentic exploration of Argentine and Porteño flavors. Spain

A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

A calçotada is a food experience that is sociable, traditional, delicious, and playful. It’s about ritual, regional identity, rural air, fire, laughter, wine, and the earth that grew your food. Portugal

This experience takes you into one of Portugal’s most iconic estates, Casa de Mateus, for a private tour and traditional lunch. Located near Vila Real, this 18th-century Baroque masterpiece was designed by Italian architect Nicolau Nasoni, whose work also defines much of Porto’s skyline. 

The experience begins with a guided visit of the palace led by an official specialist from the Casa de Mateus Foundation. You'll explore the grand salons, chapel, and gardens that reflect centuries of aristocratic life. Following the visit, sit down for a lunch served in the palace’s original kitchen—an atmospheric setting that preserves the soul of the house. The three-course meal highlights regional ingredients and is paired with wines from the Douro Valley. The kitchen, with its original stonework and antique copper tools, evokes generations of domestic life at Mateus.

While guided tours of Casa de Mateus are available to the public, this experience offers a more intimate, expanded version — led by an institutional expert who provides in-depth context and access to select rooms not typically included in standard visits. With more time for conversation and exploration, it’s a slower, more thoughtful way to engage with one of Portugal’s iconic Baroque landmarks.

This is a gentle 3-hour guided trek through the picturesque Ouirgane Valley, beginning and ending in the tranquil village of Ouirgane. This scenic walk meanders through olive and almond groves, wildflower-lined paths, and the historic village of Marigha, where traditional mud-brick homes and the ruins of a Kasbah reflect the region’s deep Berber roots. 

The trail leads to the Marigha Salt Mines, where salt has been harvested by hand for generations using time-honored techniques unchanged for centuries. Along the way, you may witness villagers transporting salt by mule or women gathering firewood and chatting under the sun. 

The return journey follows a peaceful route along ancient irrigation channels still in use today. Guided by a local expert, this experience offers a deep immersion into nature, tradition, and the enduring rhythms of Atlas village life. In summer, the walk is best in early morning or late afternoon, when the light is golden and the air cooler.

This gentle walk offers an intimate glimpse into some enduring traditions of the High Atlas. Visiting the Marigha Salt Mines typically just takes about 20 minutes. This allows ample time to observe the traditional salt harvesting methods, where salt is drawn from shallow earth basins, sun-dried, and gathered using simple tools—a practice unchanged for generations.

This experience offers a full immersion in the world of washi — Japanese handmade paper — woven into Kyoto’s architecture, rituals and daily life. For over a 1000 years, this humble material has carried story, structure and spirit across generations. Kyoto has long been a center of washi artistry, supplying paper to temples, palaces and traditional arts.

You’ll begin in the Kyoto Botanical Gardens, where you’ll learn about plants that form the base of washi and how the fibers are transformed by hand. From there, Emilie will guide you to artisan studios, offering a close look at traditional techniques and the lived artistry behind them.

Later, you’ll step inside a historic noble residence, where washi-lined walls and shoji screens show how paper softens light and defines space in Japanese design. The walk ends in a curated selection of shops in Demachiyanagi offering handmade washi — a way to see the best in the craft today, and an invitation to take home a piece of enduring culture.

Washi may be everywhere in Kyoto, but without context, it’s easy to overlook. Emilie, a researcher of traditional crafts, helps you see what’s hidden in plain sight — how paper threads through rituals, interiors, and craftsmanship. “In my youth,” he recalls, “many people came here, to the Algarve, and my family—like many others—had small farms. I spent a lot of time working on these farms growing carob, figs, almonds, and olives.” These daily rituals shaped his relationship to the land. “Everybody knows the Algarve for its oranges,” he adds, 
remembering his family’s orchard. “I have good memories of my mother and my sister making lots of cakes—almond cakes, and sometimes orange cakes too.”

That would be a Jamaican fisherman from Saint Elizabeth called Floyd who thought it would be nice to have a place where he and his buddies could hang out to and from their fishing ventures. He built the bar on a sandbar a mile off the coast in Parottee Bay out of driftwood (the wood was restored after Hurricane Ivan in 2004). In between dips in the turquoise water, you can sip a Red Stripe, eat freshly grilled snapper and play dominoes. Or catch up with Floyd at the bar. Someday, I’d like to watch the sunset from there.
