You’ll board a restored topa, the flat-bottomed boat once used by lagoon fishermen, for a rare nighttime navigation through Chioggia’s canals. Gliding through the picturesque Canal Vena under the stone bridges and soft lamplight, you’ll see the historic center from the same low-water perspective only accessible by this type of boat that locals have long experienced as they move between homes, docks, and markets.

As the boat moves into the open lagoon, the lights of Sottomarina shimmer on the horizon. The sky darkens, the water mirrors the moon, and familiar places take on a different shape at night. Long-eared owls and little owls call from rooftops and trees, while night herons skim silently over the water, hunting in the dark. This after-dark outing is a rare chance to witness the southern Venetian Lagoon as locals do, from the water at night. Chioggia’s rhythms are still tied to the lagoon’s working culture: fishing boats returning late (Chioggia is Italy’s second-largest fishing port), lamps swinging on piers, owls calling overhead. Even with Venice only an hour away by water taxi, this place feels distant from mass tourism.

The topa itself carries history; its low draft lets you slip into corners and canals most boats bypass. Because the boat sits low, reflections feel near, and the shoreline reads differently. Much of his best fiction was based on these experiences in Madrid and across Spain.

This tour brings Hemingway’s Madrid to life. You will visit some of his favorite Madrid spots, hear stories from his life and times, and hit all the places the man himself would have taken us to.

These include classic beer halls, elegant hotel lounges, cave-like basement bars, and the world’s oldest surviving restaurant. Many of these places were immortalized in his books, and most have barely changed since the author ate, drank, and wrote within their walls.

As a professional writer and a member of the prestigious El Ateneo literary society, your host has lived and breathed Madrid for over a decade. His work on the city’s culture and history includes published essays on Hemingway’s unique relationship with Madrid, making him perfectly placed to bring rich historical color and context to the author’s world here a century ago. This hands-on workshop offers rare access to one of Portugal’s most endangered crafts: Bisalhães black pottery, recognized by UNESCO as Intangible Cultural Heritage. In a small mountain village north of Vila Real, just a few remaining artisans keep this tradition alive.

You’ll step into a rustic, working atelier to see how local earth, fire, and ancestral technique come together to form these matte-black pieces. After a live demonstration of traditional hand-molding, you’ll take a seat at the wheel to shape your own, guided step-by-step by the master potter.

If weather allows, you’ll also witness the outdoor firing process—where pine needles and broom branches are used to stoke the open-air kiln. This method turns raw clay into its distinct black finish, a transformation unchanged for generations. Your completed piece is then fired, carefully packaged, and shipped to your home — a tactile memory of Douro, shaped by your own hands.

In Bisalhães, black clay pottery has been shaped by hand for centuries—but today, only a few master potters still practice this endangered art. This experience offers rare, personal access to one of them, in a setting far from the commercial workshops of larger towns.

Inside the workshop, you’ll learn how the clay is prepared, shaped and dried using traditional tools—some passed down through families—and how the outdoor kilns, fueled by pine and broom, are smothered post-fire with moss, earth and sand to lock in the signature matte-black finish. The method is entirely natural: no glaze, no paint, just earth and fire.

Under the artisan’s guidance, you’ll craft a piece using age-old techniques, then watch as it’s hardened by fire into a singular object. First documented in 1709 and inscribed in 2016 on UNESCO’s Urgent Safeguarding List, this practice is at risk—but alive. We begin our journey with a glass of vermouth or cava, a Spanish sparkling wine, in a historic ultramarinos in the Eixample, recently named one of the most beautiful shops in the world. Here, we'll discuss the development of the area and its singular architectural style. From there, we stroll to another historic venue, nestled in a first-floor modernista apartment. It boasts an outdoor terrace, perfect for further drinks and engaging conversation.

The final stop of the tour is a real gem – a singular modernista building with a breathtaking entrance. Here, after the guide has shown them the premises and explained its fascinating history, guests (without the guide) will enjoy a three-course meal with wine in a sumptuous private dining room.

Mexico

Just outside Oaxaca city is a community called San Andres Huayapam, that is famed as the birthplace of tejate. This thoughtfully curated experience offers a rare opportunity to connect with this tradition firsthand. You’ll explore the area where it was founded, peruse local murals, plus meet a traditional tejatera who will explain the process, ingredients and the history of this nutritious drink.

This pre-Hispanic libation was used in sowing and harvesting ceremonies and also consumed by Zapotec kings. It’s made from corn, cacao, flor de rosita, toasted mamey pits, and water in a massive clay pot. It’s traditionally served in a painted bowl known as a jícara.

We’ll then enjoy fresh tejate and a snack with this tejatera in her home. Finally, we’ll walk to a restaurant for a set sampler meal of traditional delicacies. This venue is located in the courtyard of another local family home, and sits under a canopy of branches, which are key to producing the blooms in the tejate process.

While the host has lived in Oaxaca for a decade, five of those years have been spent in this Zapotec community. Here, she has forged meaningful connections with locals and can speak to how the town voluntarily operates under Indigenous usos y costumbres law, as well as the annual tejate festival. That said, the specifics of this tradition will be shared by an expert local who has inherited her skills from a long line of tejate makers.

Located roughly 20 minutes from Oaxaca de Juárez, this scenic pueblo offers a glimpse of traditional village life—locals working the fields, burros carrying firewood, and adobe makers crafting custom earthen bricks. An especially popular destination for Oaxacans on weekends, many travel here to sample tejate, visit nearby lakes, and enjoy gourmet fare in family-run restaurants. It’s an authentic window into everyday life in this stunning region of southern Mexico.

Located in the northeastern corner of the Atacama Desert near the border with Bolivia, Quepiaco, Quisquiro, and Tara are among the most visually striking and ecologically unique landscapes in the region. These salt flats—salars—sit at elevations between 4,000-4,500m (13,000-14,800 feet) above sea level and are part of the Los Flamencos National Reserve. Bounded by volcanoes and inhabited by flamingos and vicuñas, this is a remarkable setting for both landscape and wildlife photography.

At each salt flat, Mirko will explain the geological features of the wetlands and salt crusts, point out native wildlife, and provide practical instruction on how to photograph it. Because of the high elevation, this tour is best scheduled for your third day or later in San Pedro de Atacama, after you’ve had time to acclimatize.

This experience starts with a thrilling drive through the Martian landscapes of the Atacama Desert. This is a prime opportunity for quizzing Mirko about the region: it's natural history, its cultural legacy, and its wildlife. Salar de Quepiaco, Salar de Quisquiro, and Salar de Tara straddle the border between Chile, Bolivia, and Argentina. They provide a habitat for all three species of South American flamingos (Andean, Chilean, and James’s) as well as llamas, vicuñas, and Andean foxes. As part of the Andean Plateau (Altiplano), these salt flats hold cultural significance for Indigenous Atacameño communities. 

Mirko's experience contextualises the natural and cultural significance of the region. Rather than simply and shooting seeing the formations, you will feel the places visited—coming to understand how every element is intertwined. Primarily a photography expedition, the experience is focused on capturing landscape and wildlife photography under the guidance of a pro photographer.

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

Fez, Morocco, is home to the Karaouine Mosque and University, one of the most significant religious and educational institutions in the Islamic world. Karaouine Mosque

Joshua Tree National Park | United States

Forty-five minutes from Palm Springs – or a slightly longer, two hours from Los Angeles - in California’s southernmost Joshua Tree National Park, I’m waiting at the Visitor Center to buy my park pass, and it’s clear that the most commonly asked question of the rangers in this Park is - “Why is it called a Joshua Tree?"

Turns out the giant, branching yucca’s shape reminded early Mormon settlers of a story in which the Prophet Joshua reaches his hands up to the sky. “A good Joshua Tree will be really thick, with arms sticking out like they’re wearing furry sleeves.” – From The Bulletin, in a 1987 article, 7 years before the trees got themselves their own National Park. 

No two Joshua Trees are alike – for that would be too boring. Instead, they defiantly withstand the desert conditions and stretch out in weird and wonderful ways.
