Stephen Phelan is a long-term resident of Madrid and a member of the prestigious El Ateneno literary society, which has its library and headquarters in Madrid's Barrio de las Letras. As a journalist he has written extensively about Madrid and its culture, including its food and drink culture, for the likes of National Geographic and The Sunday Times (London). A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

A calçotada is a food experience that is sociable, traditional, delicious, and playful. It’s about ritual, regional identity, rural air, fire, laughter, wine, and the earth that grew your food. The ritual of gathering friends for a gluttonous afternoon to eat them defines Catalan winter life in rural areas. While many gastronomic experiences offer tasting or cooking classes to visitors, few immerse you in a tradition still rooted in community and seasonality. 

In this private gathering, the owners will share how calçots are planted and harvested as leafless stalks. Ask them about the origin story of the calçotada, how it started in the Catalan town of Valls at the end of the 19th century, and about the farmer who experimented with planting onion shoots under soil and discovered their sweet, tender interior.

You leave San Sebastián by private transport and drive west toward the coast, where the Basque Country’s food culture begins in daily routines. In Zarautz, you walk through the local market as residents shop for fish landed that morning, seasonal vegetables, and cured meats that anchor home cooking. Your host explains how people here buy food day by day, and why seasonality matters.

From the coast, you head inland to the hills where txakoli vineyards cling to steep, terraced slopes. At a small, family-run winery, you see how this lightly sparkling white wine is made from native grapes shaped by Atlantic weather. The tasting is informal and direct, focused on method, land, and continuity.

The day ends at a traditional cider house. You stand at the barrel for the txotx ritual, catching cider as it’s poured, then sit down to a classic meal: cod omelet, grilled steak, and Idiazabal cheese with quince and walnuts. It’s a long lunch, taken the Basque way — unhurried and communal.

Txakoli (pronounced cha-ko-lee) is a white wine that embodies the maritime and mountain character of the Basque Country and sits at the center of this experience. Made for centuries from indigenous grapes, it reflects the meeting of Atlantic weather and steep terrain. Traditionally served young and poured from a height to aerate it, txakoli evolved to accompany local food. The winery you visit is hand-picked for its artisanship and quality — a family-run estate, well away from mass tourism.

Cider, or sagardoa, carries an equally deep history. Present in Basque rural and maritime life since at least the 11th century, it anchors a social ritual built around shared tables and long meals. The txotx remains a living custom — binding food, drink, and hospitality into a single cultural expression.

In private transport from San Sebastián, you’ll head to the nearby coastal town of Zarautz and visit the Mercado de Zarautz, its lively local food market. You’ll walk among stalls filled with fresh fish, seasonal vegetables, and cured meats, learning how Basque people shop day by day, why seasonality matters, and which ingredients define the region’s home cooking.

You’ll then continue into the surrounding hills to visit a family-run txakoli winery for a guided tasting. Cider has been an important drink in Basque culture for centuries. During the Age of Exploration, Basque sailors and whalers carried barrels of cider on long sea voyages from ports like San Sebastián and Pasajes. On Shrove Tuesday 9, February, the grand parade of the Carnevale of Tempio Pausania unfolds, culminating in the dramatic trial of Re Giorgio, accused of the city's woes. Thousands gather in the square as the float representing the king meets its fiery fate, marking the end of an exhilarating Carnevale.

After a traditional lunch, and led by local photographer Gianmario Pedroni, you'll cross streets filled with colorful guests—flag-wavers, majorettes, and musicians—each adding to the spectacle. Costumed performers dance energetically, their masks telling stories of tradition and playful anonymity.

Among the masks, you'll see the enigmatic Domino, a black cloaked mask exclusive to Tempio Pausania, used to tease friends or approach a long-desired love. You'll also meet the raucous “lu traicogghju”, echoing the carnival's wild past, and “lu linzolu cupaltatu”, a local mask created from a bedsheet.

This experience is very exclusive: Led by the official photographer of the event, Gianmario Pedroni, you will be able to access special areas closed to the public to see and photograph the parade up-close. As the son of a local float constructor, Gianmario shares insight into behind-the-scenes stories of the artisans and their work. Starting the tour at his studio allows you to see and hear the stories of his work.

At an eco center located on a 1200 year-old chinampa you see axolotl, the mythical amphibian once considered a delicacy of Aztec gods. You'll also meet Lupita, a Xochimilco native who welcomes you with organic coffee. She explains how the first inhabitants developed milpa, an ancestral and sustainable system of crop production. You may see small offerings once placed beneath crops by Xochimilca women, honoring Chicomecóatl, the corn goddess.

You explore the chinampa's crops and pick your favorites. Lupita will ask you to help her make a delicious green salsa, which, along with the freshly harvested salad and tlacoyitos filled with beans, will be your fresh, organic lunch.

This is not a party trajinera tour. Instead, you'll experience Xochimilco in a mindful and peaceful way. The early morning start allows you to enjoy a truly calm Xochimilco, when birdsong is at its peak, and the area's wildlife is at its most vibrant. While canoeing at dawn, you'll gain insights into conservation efforts by the people who keep Xochimilco's ancient canal system alive.

At the environmental center, you'll learn how lake mud, branches, and vegetation are layered to create stable soil, how the banks are anchored, and how the narrow channels are calmed so that amphibian larvae and native fish can maintain their space. Your host will explain why the chinampas were declared a UNESCO World Heritage Site in 1987. At its peak, this agricultural system produced nearly 4 tons of produce per hectare — a yield unmatched by any other agricultural system in the world. You will also learn about projects that help the axolotl return to its natural habitat.

When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.
As tourism evolves, Tiago points toward Lisbon’s under-known strengths. “Gastronomy, street art, tiles, contemporary architecture… there’s so much more to discover!”

This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

For João, the true essence of the Algarve lies in its sensory landscape and the stories attached to it.
“In my youth,” he recalls, “many people came here, to the Algarve, and my family—like many others—had small farms. I spent a lot of time working on these farms growing carob, figs, almonds, and olives.” These daily rituals shaped his relationship to the land. “Everybody knows the Algarve for its oranges,” he adds, 
remembering his family’s orchard. “I have good memories of my mother and my sister making lots of cakes—almond cakes, and sometimes orange cakes too.”
What João wants travelers to experience is that same connection: the gestures and flavors that tie people to place. “We still recognize these things—the tradition of fishing, the dry fruits, the rituals of picking and preparing. This is what I want travelers to connect with.”
Still, he knows it's not always simple. “The Algarve is quite diverse. It’s not just one story. A good connection to the people here is important. Travelers are interested in how we live, how we spend the day, what we do.” This itinerary is João’s answer to that challenge: an immersive route where nature, food, craft, and memory guide the pace.

Jamaica

1942: Errol Flynn popularised rafting down the river Rio Grande in Jamaica on bamboo rafts, made of long logs bound together. Fast forward: I'm on a raft for a 3-hour ride and sensory overload: ferns, birds, rapids, butterflies, serenading raft captain. But here’s my favorite part —

After an hour on the river, we dock at Belinda’s Riverside Restaurant, a rustic gem nestled by the Rio Grande. How does this place even exist in the middle of nowhere? Turns out Belinda and team hike a couple of hours across the hills, ingredients in tow, to set up shop each time, serving up Jamaican-style curry goat and fish (take your pick: fried, steamed, or escoveitched). Prepared with love and served alongside rice or bammy. One of my best meals in Jamaica. Call ahead to make sure Belinda’s is open on the day you visit.

The museum of photographs is fascinating in how it came about – two famous photographers, Patrick Menac’h and Hamid Mergani, brought together their common passion for vintage Moroccan photography, and pooled their photos for the public to admire. Here I realize how black-and-white photos can dramatize the light-and-shadow effects in the medina.

From the terrace, you can have a glass of mint tea, and wonder about the thousands of satellite dishes that dominate the view. 

It’s peaceful here. On a clear day, you can see the snow-clad High Atlas Mountains. But you can’t see the chaos of Djemaa el-Fna, or hear shouts of ‘Balek!’ whenever donkey-carts come through laden with heavy goods. You can’t see the ‘hand of Fatima’ good-luck symbols painted on the carts after they have ambled past you. Or count the number of chickens being transported on the back of a groaning Vespa.

Pausing in the Frenzy

Nestled along the western coast of Sicily, the Marsala Salt Pans present a spectacular blend of natural beauty and human ingenuity. This sprawling network of shallow salt pools, used for the traditional method of sea salt extraction, dates back to the Phoenicians. The Marsala Salt Pans are also a haven for birdwatchers and nature enthusiasts. Here are some things to look for when you visit:

1: Salt Harvesting Tradition: The salt pans showcase a centuries-old method of salt harvesting. Sea water is channeled into shallow ponds and left to evaporate, leaving behind high-quality sea salt. 
2: Eco-System and Wildlife: The area is a thriving ecosystem, attracting a diverse range of bird species, especially during the migration seasons. Flamingos, herons, and storks are common sights, making it a fantastic spot for birdwatching.
3: Windmills and Museums: Scattered across the salt pans are iconic windmills, once used to pump water and grind the harvested salt. Some of these windmills have been converted into museums, providing insights into the history and process of salt production. We also recommend visiting the Salt Museum of Saline Culcasi, located in the Nubia district, this museum is a vivid testament to the harmonious relationship between the sea and the land.

Myanmar (Burma)

On a foggy morning as the sun rose over Lake Inle, my boatman took me to the rendezvous point deep inside Inle Lake. Three fishermen sat in their boats with little fires to warm them up. They had promised me the previous evening to do a demonstration of their fishing technique. 

The quintessential pose of the Inle fisherman involves standing at the end of the boat on one leg with the other wrapped around his oar. Inle is a shallow lake and standing wouldn’t let they see the reeds below, they explain. Plus they use their body to propel the boat, leaving their hands free to collect their fishing net. 

Then they throw the cone-shape nets into the water, pressing on it with their foot so it sinks to the bottom where the fish are and traps them in.
