Embark on a captivating hiking journey through the remnants of Ancient Noto, a city frozen in time with its city walls, gates, castles, towers, humble houses, and grand palaces all crafted from the white limestone of the Iblei. Despite flourishing vegetation and three centuries of neglect, the site emanates a fairytale allure, bearing witness to its prehistoric origins until the catastrophic earthquake of 1693 led to its abandonment and subsequent relocation. Descending towards the Cava del Carosello canyon, the hiking route unveils ancient caves transformed into rock tanneries and mills amidst lakes and streams. The magnificent quarry, cradling the vital Asinaro River, reveals over 50 active rock tanneries dating back to the 1400s, alongside exceptional biodiversity. Participants have the opportunity to swim in the Asinaro River and discover the natural plunge pool, Urvu.

Following the hike, guests are welcomed to a local almond farm, where experts in almond production offer Almond Milk and a light lunch crafted from locally sourced ingredients.
