Cooking Class in Marrakesh: Private access to Amal Center with local cuisine & social mission.

We start by learning the different spices that go into Moroccan cuisine.
Then we get to work! After we do the basic prep of our dishes, we put them on charcoal to cook and use the bellows to make sure the fire is hot.
Once our fires are going nicely, we sit and enjoy a tea ceremony, where the hosts will talk about Amal Center, it's special mission to empower women, as well as any and all questions guests may have about Morocco in general.
Once the dishes are done, it's time to enjoy the fruits of our labor!

This experience accommodates a minimum of 2 and a maximum of 6 people. Included are a hands-on Moroccan private cooking session featuring a curated variety of traditional dishes, tea ceremony with homemade cookies, early dinner to enjoy the meal you’ve prepared, and a contribution to the Amal Center’s nonprofit mission. You’ll have the chance to wear a festive Moroccan kaftan during the tea ceremony, adding a joyful cultural touch.

This experience was created by Nora Fitzgerald Belahcen, founder of the Amal Center—a nonprofit dedicated to empowering women through culinary training and job placement. The session is led by the on-site manager and supported by members of Amal’s original team of chefs—women who helped shape the center and now lead with warmth, confidence, and skill.

You’ll be guided by a small, welcoming team trained in the spirit of Amal’s mission: to use food not only as craft and culture, but as a path to opportunity and connection. Their deep knowledge of Moroccan cuisine and generous hospitality ensure an experience that’s as meaningful as it is memorable.

The old Spanish saying “Put me in the sun and give me wine and ham!” reveals just how deeply Iberian ham is woven into the country’s diet and culture. These rich, paper-thin slices of cured pork are a tapas essential — but there’s far more to them than meets the eye.

In this experience, you’ll discover that ham carving isn’t just a technique — it’s an art form, practiced with care and reverence. At a family-run business, master carvers will demonstrate how each cut affects the flavor, texture, and aroma. As they work with precision and passion, they’ll explain the different parts of the ham and the history and tradition behind it.

Your expert host will explain why true Iberian ham can only be produced in Spain, highlight its distinctive characteristics, and explore the different quality levels, from natural grain-fed ham to the prized 100% Iberian acorn-fed ham — and why each deserves its place on the plate.

This experience takes place in a family business in Madrid’s historic Austrias neighborhood. It’s run by the third generation of the Arroyo family, whose grandfather founded the business 65 years ago. They still source their jamón ibérico from the same farms — small producers who raise black Iberian pigs on oak-covered dehesa. The slow, natural process gives the ham its marbled texture and depth of flavor. 

Iberian ham has been part of Spanish culinary tradition for over 2,000 years. In this experience, you’ll learn how the carving itself becomes a craft — it takes years to learn how to follow the grain, anticipate the cut, and honor every part of the ham.

Using a clay unique to the region, shaped by ancestral Licarantai traditions, you’ll create your own piece while learning how reverence for Pachamama lives on through craft. In the afternoon, take time on your own to visit nearby Laguna Cejar — a salt-rich lagoon where the water suspends you weightlessly in its mineral grip.
DAY 2 – FLAMINGOS AND THE ALTIPLANO | Wake early to head deep into the Chilean altiplano. He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. With its giant eggs on the roof, a Mae West room, and mind-bending installations, the museum offers visitors an unforgettable dive into Dalí’s eccentric and imaginative world.

1. The museum’s exterior is instantly recognizable for its red façade adorned with bread-shaped ornaments and crowned with giant egg sculptures—an iconic symbol of Dalí’s playful style.

Dalí Museum in Figueres

Nestled along the western coast of Sicily, the Marsala Salt Pans present a spectacular blend of natural beauty and human ingenuity. This sprawling network of shallow salt pools, used for the traditional method of sea salt extraction, dates back to the Phoenicians. The Marsala Salt Pans are also a haven for birdwatchers and nature enthusiasts. Here are some things to look for when you visit:

1: Salt Harvesting Tradition: The salt pans showcase a centuries-old method of salt harvesting. Sea water is channeled into shallow ponds and left to evaporate, leaving behind high-quality sea salt. 
2: Eco-System and Wildlife: The area is a thriving ecosystem, attracting a diverse range of bird species, especially during the migration seasons. Flamingos, herons, and storks are common sights, making it a fantastic spot for birdwatching.
3: Windmills and Museums: Scattered across the salt pans are iconic windmills, once used to pump water and grind the harvested salt. Some of these windmills have been converted into museums, providing insights into the history and process of salt production. We also recommend visiting the Salt Museum of Saline Culcasi, located in the Nubia district, this museum is a vivid testament to the harmonious relationship between the sea and the land. 
4: Panoramic Views: The salt pans offer mesmerizing views, especially at sunset when the sky and water transform into a palette of vivid colors. The blend of nature and craftsmanship makes for an unforgettable sight.
5: Culinary Significance: Marsala salt is renowned for its quality and is a staple in Sicilian cuisine. You can purchase locally harvested salt, a unique souvenir representing the region's culinary heritage.

There are so many museums and art galleries in Paris that it's hard to decide where to go first. Most tourists want to stand in line at the Louvre, admire Claude Monet, or visit the National Museum of Art – but as so few check out the famous street art of Paris, we knew it was our thing to do.
There is so much history behind each piece of art or painting out there that it is worth investing some extra money and time to immerse yourself in Paris's artistic exploration fully. We did a whole self-organized art walk visiting 7 streets, with an audio tour, and visited the different places on our own (though you can get a personal guide). 
Our highlight was Rue Saint-Maur – a 2km-long street painted mainly by the artist Kashink. The artist plays with classic elements of Parisian street art and combines them with modern political messages.

Amfissa, Greece, is home to the Lion of Bavaria Monument, a lesser-known but historically significant statue that commemorates the close ties between Greece and Bavaria in the 19th century. Erected in 1836 by order of King Ludwig I of Bavaria, the monument honors the Bavarian soldiers who accompanied King Otto, the first modern king of Greece, following the country’s independence from the Ottoman Empire. Lion of Bavaria Monument

Fez, Morocco, is home to the Bou Inania Madrasa, one of the most stunning examples of Marinid-era Islamic architecture. Built in the 14th century by Sultan Abu Inan Faris, this madrasa (Islamic school) served as both a center of learning and a place of worship. Unlike many religious sites in Morocco, Bou Inania is one of the few madrasas open to non-Muslim visitors, allowing them to admire its breathtaking zellij tilework, intricate wood carvings, and grand courtyard. A masterpiece of Moroccan craftsmanship, the madrasa is a must-visit for those interested in history, architecture, and photography.

1. The grand entrance, framed by an elaborately carved cedarwood door, welcomes visitors into a world of geometric patterns, Arabic calligraphy, and fine stucco work.

2. The courtyard, with its marble floors, central fountain, and exquisite zellij tile mosaics, is a striking example of Moroccan-Andalusian design and a perfect spot for photography.

3. Towering above the medina, the madrasa’s green-tiled minaret is one of the most recognizable landmarks in Fez and can be admired from various rooftops around the city.

5. The tranquil ambiance of the madrasa, combined with its artistic mastery, offers a peaceful retreat from the bustling souks just outside its doors.

Whether you're drawn by history, nature, or photography, Agdz and the Draa Valley offer an unforgettable experience of southern Morocco’s beauty and heritage.

1. The Draa River winds through the valley, creating a striking contrast between the golden desert dunes and the lush greenery of date palm oases. It’s one of Morocco’s most picturesque landscapes.

2. A 17th-century fortress called Kasbah des Caïds stands in Agdz, offering visitors a glimpse into Morocco’s past with its beautifully preserved mudbrick architecture and panoramic rooftop views.

3. Endless palm groves stretch across the valley, providing a peaceful setting for walks or bike rides under the shade of towering date palms. The region is known for producing some of Morocco’s finest dates.

4. Traditional Berber villages line the valley, where visitors can explore vibrant souks, meet local artisans, and experience warm Moroccan hospitality over a cup of mint tea.

5. The desert landscapes beyond the valley lead into the vast Sahara, making Agdz a perfect starting point for a camel trek or a night under the stars in a desert camp.

Tips for Visiting: 

The best time to visit is October to April, when temperatures are cooler and the valley is at its most vibrant. A 4x4 vehicle is recommended for reaching remote areas, and packing a hat, sunscreen, and plenty of water is essential for outdoor activities. Staying in a traditional kasbah guesthouse offers an immersive experience, while a camera is a must to capture the stunning palm groves, kasbahs, and desert landscapes.

Agdz & the Draa Valley

Nestled in the hills of central Crete, Spili Village enchants visitors with its traditional charm, Venetian-style fountains, and lush greenery. It’s the perfect place for a relaxing day trip to experience the island’s authentic culture and hospitality.
1. The village’s famous Venetian fountain features 25 lion heads with crystal-clear spring water.
2. Picturesque streets lined with traditional houses and colorful flowers create a delightful setting.
3. Shops offer locally made crafts, herbal remedies, and olive oil products.
4. The surrounding countryside is ideal for leisurely walks or short hikes.
5. It’s a great place to enjoy a quiet meal at a family-run taverna serving Cretan specialties.

Spili Village

This cathedral, known for its blend of Romanesque and Gothic styles, offers not only spiritual solace but also stunning views of the city. Top 5 highlights:
