Hosted in his intimate restaurant, Chef Toshihiko Yamamoto will explain the history and importance of dashi in Japanese cooking while together, you prepare a fresh batch of dashi to use for an exquisite meal. You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. As he prepares the meal, feel free to ask questions or take photos and video of the process. With nearly a decade's experience working for a dashi company and years as a chef specializing in Italian cuisine, Chef Yamamoto brings a new perspective to the use of Japanese dashi in cuisine from other parts of the world. Rather than focusing solely on traditional Japanese dishes, he will show you how dashi can be used to creatively season other dishes, from wagyu beef to fried cheese.

This interactive experience allows you to participate in the dashi making process while getting a close-up view of a Japanese chef preparing a special private meal in his own restaurant. Chef Toshihiko Yamamoto runs his own restaurant in Kyoto, specializing in a refined version of oden, a traditional Japanese stew. With years of experience as both a chef and an employee of a dashi producing company, Chef Yamamoto is passionate about sharing the history and culture of dashi with a global audience and is excited to invite overseas guests to experience dashi in an intimate way that may inspire them to use it more often in their own cooking.

Chef Yamamoto is also a long-time practitioner of the Omotesenke school of Japanese tea ceremony, an interest that influences his cooking and design aesthetic.

Spain

The great American novelist and journalist Ernest Hemingway spent some of the best days and nights of his life in Madrid. Starting as a young aficionado of the bullfights, he returned as a foreign correspondent for dangerous reporting assignments during the Spanish Civil War, and later shared drinks around town with visiting Hollywood stars of the 1950s. Much of his best fiction was based on these experiences in Madrid and across Spain.

This tour brings Hemingway’s Madrid to life. You will visit some of his favorite Madrid spots, hear stories from his life and times, and hit all the places the man himself would have taken us to.

These include classic beer halls, elegant hotel lounges, cave-like basement bars, and the world’s oldest surviving restaurant. Many of these places were immortalized in his books, and most have barely changed since the author ate, drank, and wrote within their walls.

As a professional writer and a member of the prestigious El Ateneo literary society, your host has lived and breathed Madrid for over a decade. His work on the city’s culture and history includes published essays on Hemingway’s unique relationship with Madrid, making him perfectly placed to bring rich historical color and context to the author’s world here a century ago. This is a full-day guided trek through the High Atlas Mountains, starting and ending in the village of Imlil. Your journey begins with a gradual climb through Tamatert, a quiet mountain village with stone homes and terraced fields, before reaching the Tidli Plateau at 2,350 meters. This wide-open ridge offers stunning 360° views of the surrounding peaks and valleys, often with no one else in sight. The trail then continues to the Isk Summit at 2,500 meters, offering even more expansive vistas, including sights of Mount Toubkal. 

Afterward, the path continues downhill past terraced farmland and the peaceful Amadin Waterfall—an ideal spot to rest your legs and soak in the mountain air. You’ll then pass through the sleepy village of Achain before returning to Imlil by late afternoon. The trek takes around 5–6 hours at a moderate pace and is ideal for reasonably fit hikers looking for a quiet, off-the-beaten-path route filled with natural beauty and mountain hospitality.

Hiking to the rarely visited Tidli Plateau, a panoramic ridge with sweeping views of Mount Toubkal—a ridge offering panoramic views seldom seen by visitors, makes this special. Unlike the busier trails leading to the Toubkal summit, this path is peaceful and lesser-known—ideal for travelers who want to experience the rhythm of the mountains without the crowds. 

The trail is richly varied, from forested switchbacks to sunlit plateaus, cultivated fields and rushing streams. Your guide, deeply familiar with the land, will share insights into the area's traditions and the significance of local landmarks. 

Lunch is a generous, home-cooked Berber meal in the village of Armed, served with mountain views and genuine warmth. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

The Caves in Negril offers a unique and exhilarating experience for those seeking adventure in a breathtakingly beautiful setting. Perched atop honeycomb cliffs formed by volcanic activity, The Caves is a gateway to thrilling cliff diving and cave swimming experiences.

The natural structure of the cliffs at The Caves makes them an ideal location for cliff diving. The walls of the resort are a veritable museum of ancient fossilized marine life and provide a variety of diving spots. 

As guests at The Caves, we were encouraged to take early morning dives from the cliffs, with jumps ranging from 8 ft to 30 ft, and there's even a jump inside a cave for the more daring. 

Despite the excitement of cliff diving, it's important to approach this activity with caution. The heights can be intimidating, and the water can appear menacing, especially when the weather is not ideal. So be careful and always go with a companion.

Castro Marin Castle

My sister and I flew into Las Vegas to then see the Grand Canyon. We woke early to get picked up at our hotel and the tour took us to the Hoover Dam, a stop on Route 66 (where the Cars movie took place), and finally the Grand Canyon. We did an easy hike but it took about 4 hours. We stopped multiple times for pictures. It was amazing. The pictures don’t do it justice. 

My sister and I wish we had spent more time there and maybe hiking a different trail.
