This is a 3-hour cooking experience at the Amal Women’s Cooperative Center, founded by the remarkable Nora Fitzgerald Belahcen. Rooted in empowerment and inclusion, the experience offers a hands-on introduction to Moroccan cuisine while celebrating the social impact of food.

You’ll begin with a short introduction to Amal’s mission—supporting women from vulnerable backgrounds by training them in the culinary arts. From there, you’ll dive into Moroccan cooking: exploring local spices, learning the stories of each dish, and preparing a traditional feast with fresh, seasonal ingredients. Some recipes are cooked over charcoal, using bellows to control the flame—an immersive detail that reflects Morocco’s culinary heritage.

As your dishes simmer, you'll enjoy a traditional tea paired with homemade cookies. The experience ends with a shared meal; you’ll gather to taste what you've created and connect with members of the Amal team, learning more about their lives, resilience and work.

Unlike many cooking classes in Marrakesh, this experience is private, intimate and timed for an early dinner, featuring a selection of thoughtfully curated dishes to prepare and enjoy. This experience was created by Nora Fitzgerald Belahcen, founder of the Amal Center—a nonprofit dedicated to empowering women through culinary training and job placement. The session is led by the on-site manager and supported by members of Amal’s original team of chefs—women who helped shape the center and now lead with warmth, confidence, and skill.

You’ll be guided by a small, welcoming team trained in the spirit of Amal’s mission: to use food not only as craft and culture, but as a path to opportunity and connection. Their deep knowledge of Moroccan cuisine and generous hospitality ensure an experience that’s as meaningful as it is memorable.

This is a photo walk to watch the sunset over the sea, while birds fly over the cliffs. The easy path winds along the coast to a panoramic viewpoint offering a stunning view of the Capo Nieddu waterfall—the only one in Sardinia that flows directly into the sea. As the sun sets, you'll see the landscape transform: golden light paints the cliffs and the sea. An expert photographer will offer advice on how to capture the beauty of nature through your lens.

In a slow-paced walk, you can enjoy the view without rushing, taking breaks to contemplate the sea and the majestic waterfall. You’ll savor a picnic featuring traditional Sardinian products, including carasau bread, local cheeses, cured meats, and a glass of Cannonau wine.

When the sun disappears on the horizon, leaving the sky ablaze with orange and pink hues, the magical blue hour begins. You'll pause for a meditative moment, listening to the sound of water and wind, before returning to the starting point under the starry sky.

During the rainy season (January to April), the Capo Nieddu waterfall plunges directly into the sea 40 meters down a steep cliff, creating a breathtaking spectacle. Standing on the cliff in a wild landscape, you'll feel connected to nature as the wind dances between the rocks—a truly mesmerizing experience.

Massimiliano will lead you to the lesser-known viewpoints, turning the walk into an exciting adventure. As an expert photographer, he will share techniques and angles to help you capture extraordinary shots.

Argentina

Taste something a little different on this wine and tasting at one of the oldest wineries in Mendoza. While most pairings come with cheese and charcuterie, this estate in the Maipú Wine Region serves their wine with locally-made chocolates and alfajores. But before then, you’ll explore the grounds of this family-run winery on a slow, mindful walk. While exploring organic vineyards and old cellar doors, you’ll learn about simple traditions kept alive by this family of winemakers for generations. The wines here are made with minimal intervention, with a high minerality due to the characteristics of the soil and the organic viticultural practices.

This leads into the tasting of wines sweet delights: satiny chocolates and decadent alfajores that complement each varietal and bring out the flavours in unexpected ways. If visiting June to September, take a short boat ride to Santa Clara Island, where artist Cristina Iglesias has created a sculptural installation inside the lighthouse — a powerful encounter between art and sea. 

Back on shore, the Kursaal’s angular modernist geometry and the Miramar Palace gardens, with views over La Concha Bay, reflect two distinct visions of San Sebastian’s cultural ambition.

Mexico

A short guided hike of roughly two hours will take you to a series of caves featuring rustic paintings and traces of human habitation dating back over 10,000 years. They depict the early domestication period of the Zapotec people, when their ancestors first settled here as hunter-gatherers. These caverns are part of a larger network of over 200 caves in Yagul, where the earliest remnants of domesticated corn—a tiny and now obsolete variety known as teocintle—were discovered. This entire area was designated a UNESCO World Heritage Site in 2010.

As these caves are protected and the town operates under Indigenous law, it’s required that we travel with a local guide provided by the pueblo’s government office.

After the hike, we’ll continue the corn theme with lunch at a local restaurant, sampling one of the most iconic corn-based dishes in Oaxaca: the tlayuda. We’ll share a variety of styles, along with a refreshing non-alcoholic agua fresca.

This hike is a chance to appreciate the splendor of the Oaxacan countryside and gain insight into the earliest Zapotec people who settled in this land. Your host, a long-time Oaxaca resident with strong connections to this community, will arrange the hike with a guide from the local government office to ensure the experience complies with Indigenous law for this protected area. Participants can specify whether they would like the tour in English or Spanish. This offers unmatched insight into the history and ecology of the region.

You’ll then explore the magic of corn firsthand by trying one of Oaxaca’s most iconic delicacies—the tlayuda. Jamaica

A Black River Safari took us into the heart of the largest freshwater wetland ecosystem in Jamaica, the Great Morass at the Black River. This area, spanning 125 square miles, is a haven for biodiversity, featuring giant mangrove trees and an array of swamp animals, including the endangered American crocodile, protected under the Wildlife Protection Act in Jamaica. 

The guides spotted crocodiles of various sizes in the water and along the riverbanks, including baby crocodiles. Also several bird species call this area home. As we glided along the river, we saw snowy egrets, great egrets, and great blue herons, among other bird species.

The River teems with mangrove trees, ferns, and water lilies. The mangroves are particularly noteworthy, with some species having roots extending 40 feet downward. A curious aspect of the Black River is its dark color, which becomes more noticeable as you move upstream. This is due to the peat soil at the bottom of the river, which, despite giving the river its dark appearance, keeps the water clear. 

If you're interested in learning more about the crocodiles, many tours conclude with a visit to the Crocodile Nursery, where young and injured crocodiles are cared for until they are ready to return to the wild.

Wander Through the Old Town (1:00 PM - 2:30 PM). Begin your afternoon with a stroll through Ljubljana's Old Town, focusing on Mestni trg (Town Square) and Stari trg (Old Square). The square and church offer excellent photo opportunities with their vibrant atmosphere and stunning architecture.

Ljubljana Castle (4:00 PM - 6:00 PM). Take the funicular ride to Ljubljana Castle for sunset. Capture panoramic views of the city and the surrounding Alps. The castle offers sweeping landscapes and intricate architectural details. The walk from the castle to Metelkova Mesto, including the cable car ride, can take around 20-30 minutes considering all waits and walking distances.

Metelkova Mesto (6:15 PM - 7:00 PM). End your day at Metelkova Mesto, an autonomous cultural center known for its vibrant street art and alternative scene. Capture the colorful murals and the lively atmosphere, and include the unique architecture and artistic details of the area.

Photo Walk 2: Ljubljana

Valencia, Spain, is home to the City of Arts and Sciences (Ciudad de las Artes y las Ciencias), an architectural and cultural masterpiece designed by Santiago Calatrava and Félix Candela. This futuristic complex, set within the scenic Turia Gardens, is one of Spain’s most iconic landmarks. Combining science, art, and entertainment, the complex features striking white structures, reflective pools, and cutting-edge exhibitions—making it a must-visit destination for travelers, photographers, and families alike.

1. The Hemisfèric, shaped like a giant eye, houses an IMAX cinema, planetarium, and laser show—a must-visit for science and astronomy enthusiasts.

2. The Oceanogràfic is Europe’s largest aquarium, featuring immersive marine habitats from Arctic waters to tropical seas, and a stunning underwater tunnel where sharks swim overhead.

The Byzantine mosaics of Ravenna are a magnificent display of early Christian art, dating back to the 5th and 6th centuries. These mosaics, housed in several churches and monuments across the city, represent some of the finest examples of Byzantine craftsmanship in the world. Declared UNESCO World Heritage Sites, Ravenna’s mosaics are celebrated for their vibrant colors, intricate designs, and profound religious significance, offering visitors a glimpse into the city’s storied past as a center of the Western Roman Empire and later Byzantine rule.

Enchanted: Lokrum Island

Rising from the desert plains like a vision from another time, Aït Benhaddou is one of Morocco’s most iconic and well-preserved ksars (fortified villages). Recognized as a UNESCO World Heritage Site, this stunning earthen settlement along the former trans-Saharan trade route has been a backdrop for countless films and TV series, including Gladiator and Game of Thrones. With its towering mudbrick kasbahs, labyrinthine alleys, and breathtaking mountain views, Aït Benhaddou is a must-visit for history lovers, photographers, and culture enthusiasts.

Bringing cash is useful for small entry fees, souvenirs, and local cafés, as card payments are rarely accepted.

Alqueva Lake, located in Portugal’s Alentejo region, is the largest artificial lake in Western Europe and a serene destination for nature lovers, stargazers, and outdoor enthusiasts. Delta de l’Ebre

Piazza Navona, with its elegant Baroque artistry and vibrant street life, is one of Rome's most picturesque and popular public squares. Built on the site of the Stadium of Domitian, this elongated piazza is not only a testament to the city's rich history but also a bustling hub of contemporary Roman life. Key highlights to look for:

2 - Fountain of the Four Rivers: The centerpiece of Piazza Navona is Gian Lorenzo Bernini's Fountain of the Four Rivers (Fontana dei Quattro Fiumi). "If I know a song of Africa, of the giraffe and the African new moon lying on her back, does Africa know a song of me?", mused Karen Blixen in Out of Africa. I am too much of a nomad but if I ever owned a farm, as Ms. Blixen did, it would be in the Lamai Wedge - located in the triangular watershed between the Kenya border and the Mara river. Possibly the most beautiful place in East Africa. Besides being a refuge for the Great Migration after crossing the River Mara, it has great game year-round.

Until recently, no camps were allowed here, but now you can stay at the Singita Mara River Tented Camp and a few others. 

And wake up at dawn to catch the sun filtering through the clouds and mist. The Wildebeest seem a little dazed as they contemplate the scenery over the hills of Kenya while eating succulent grasses - and staying out of the way of the cheetah brothers out on a prowl, with whom we tagged along for an unsuccessful hunt. Life is tough.

If you're looking for an unconventional neighborhood with art galleries, parks to hang out in, and lots of young, trendy people, Newtown is the place for you. I basically spend all my weekends there, drinking coffee, going to book clubs, working at the community kitchen Lentil as Anything, and having a beer at one of the lively bars at night. 

Australians love vintage – which makes Newtown the heaven for vintage clothes, cameras, vinyl records, and much more. I’ve got some new sandals, a polaroid camera, and jewelry, all unique pieces at an amazing price. Worth the hype!

You can easily get there by train, it's just a ride from Town Hall, or simply stay a few days in one of the hostels in Newtown.
