This walk traces lesser-known paths along the caldera, beyond the main trail most visitors follow. It begins above Oia, where the island opens up to expansive views, then branches off into routes that wind past deserted caves, lava-shaped spires, and small chapels carved into the cliffside. It’s for those who want to see what the typical postcards leave out.

From the ridges of Imerovigli and Firostefani to a secluded stretch near Megalochori, the route connects volcanic outcrops, historic windmills, and viewpoints where the caldera seems to fold into the sky. Whether you love to cook or simply appreciate the subtle flavors of Japanese cuisine, this private experience hosted by a Kyoto chef will satisfy your curiosity about the world of dashi, the foundational ingredient in most Japanese dishes. Hosted in his intimate restaurant, Chef Toshihiko Yamamoto will explain the history and importance of dashi in Japanese cooking while together, you prepare a fresh batch of dashi to use for an exquisite meal. You will shave the dried bonito into flakes and boil it with kombu kelp into a broth rich with umami flavor.

Next, Chef Yamamoto will prepare a special meal with a little help from you, creating Western-Japanese fusion dishes to show how easily dashi can be used as an ingredient to your own style of cuisine. As he prepares the meal, feel free to ask questions or take photos and video of the process. After the meal, the chef will prepare a bowl of matcha in the style of Omotesenke tea cermony, the perfect way to wrap up this unique experience.

Yet the kimono cannot be worn without its equally elegant counterpart, the obi—a belt-like accessory whose colors and patterns enhance the garment. In this hands-on experience, French fashion designer Clémentine opens up her world, sharing deep knowledge of kimono and obi through a relaxed creative workshop.

She’ll take you on a journey through time, explaining the evolution of these garments and how advances in textile manufacturing shaped their design. You'll explore different types of kimono, learn about their occasions and etiquette, and see up-close the textiles — brocade, silk, hand-dyed patterns — that make each piece distinct.

Then comes the transformation: choosing from Clémentine’s collection of vintage obi, you’ll design your own modern accessory — a pouch that breathes new life into traditional materials, letting you carry a piece of Japan with you.

While kimono remain an important part of Japanese tradition, many are worn only once — at weddings or formal events — then stored away and forgotten. Clémentine’s workshop honors these garments and the artisans behind them by giving the fabric new purpose.

This 4-hour cooking class shares Valparaíso's culinary legacy through four dishes celebrating the fusion of Chilean heritage and European influences from when the seaport was at its heyday. The cooking experience and wine pairing take place in the home of Al Ramirez, a sommelier and street artist from Valparaíso. In keeping with the spirit of "sobremesa", the cherished Chilean tradition of lingering around the table, the experience is unhurried and focuses as much on human stories as kitchen secrets. 

You'll start with every Porteño's favorite sharer—Calugas de Pescado, a platter of fried fish drizzled with lemon. Machas a la Parmesana (baked razor clams) follow suit while a pasta dish fusing Chilean and Italian techniques simmers on the stove. Dobladitas (French-inspired bread) served with pebre (Chilean salsa) or manjar (dulce de leche) completes the experience. When asked about his love for Lisbon, Tiago’s enthusiasm is immediate: “I love my city! I really love the historic center of Lisbon!” Though he didn’t always feel that way. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. 1 - The foundation of Santa Maria delle Grazie dates back to 1459, when Count Gaspare Vimercati donated land to the Dominican friars of Sant'Eustorgio. Salta’s old town center has rich history and a living folk culture. Colonial facades, neo-classical architecture, church with bell tower and crowds of happy people meeting up with friends before dinner.

My night ends at a peña (music/social club) where local musicians perform songs and the audience sings and dances along.

There’s the chacarera, a lively partner dance with much stomping. During zamba, couples circle each other, waving white handkerchiefs. Finally in the cherished malambo, a male gaucho performs his best steps to show off his strength and boldness to upstage other competitors. Then the dancers go around the room looking for partners from among the audience, and it’s fascinating to see the eagerness of the crowd to join in.

There’s a lot of Fernet-and-Coke - or the local Torrontés - on the tables to go along, and soon everyone is singing to the chorus. Their spirit is infectious.
