What is this?
This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.
Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

While fire, meat, and wine are the foundations of the experience, it's the friendships that will leave a lasting impression. Only by tending to the parilla (grill) yourself, and helping to keep everyone’s glass of wine topped up can you truly appreciate the joy of the asado.

Juan Víctor is passionate about history, art, the outdoors, and meeting new people. He has a particular fondness for barbecues and sharing this unique aspect of Chilean life with overseas visitors.
