This dinner and drinking experience takes place in Shinjuku, the heart of Tokyo's dining and drinking districts. You'll start your experience at a tiny, 8-seat yakitori shop that is only open for a few hours each night. Established by a husband and wife team nearly 40 years ago, the wife took over running the shop on her own when her husband's health declined several years ago. A long established clientele and 6 consecutive appearances on the annual Top 100 yakitori shops in Tokyo keeps the shop full nearly every night, but also makes it difficult for newcomers to join in.

Your host Aya is a long-time customer of the shop who will introduce you to the owner and customers alike as you enjoy a full course yakitori meal, drinks, and friendly interaction with the regulars. The shop closes at 9:00pm, at which point you and the remaining regular customers help shut down the shop before heading to the nearby Golden Gai area to enjoy a few rounds of drinks and lively conversation.

Establishments like this yakitori shop, with excellent quality food, a long list of regular customers, and few seats can be nearly impossible for visitors to Japan to enjoy on their own. Aya, a foodie who grew up in Tokyo and has arranged a variety of difficult-to-organize experiences for company CEOs and other VIPs, gets you rare access to this cozy shop and an opportunity to mingle with the owner and regulars. This hands-on workshop offers rare access to one of Portugal’s most endangered crafts: Bisalhães black pottery, recognized by UNESCO as Intangible Cultural Heritage. In a small mountain village north of Vila Real, just a few remaining artisans keep this tradition alive.

You’ll step into a rustic, working atelier to see how local earth, fire, and ancestral technique come together to form these matte-black pieces. After a live demonstration of traditional hand-molding, you’ll take a seat at the wheel to shape your own, guided step-by-step by the master potter.

If weather allows, you’ll also witness the outdoor firing process—where pine needles and broom branches are used to stoke the open-air kiln. This method turns raw clay into its distinct black finish, a transformation unchanged for generations. Your completed piece is then fired, carefully packaged, and shipped to your home — a tactile memory of Douro, shaped by your own hands.

In Bisalhães, black clay pottery has been shaped by hand for centuries—but today, only a few master potters still practice this endangered art. This experience offers rare, personal access to one of them, in a setting far from the commercial workshops of larger towns.

Inside the workshop, you’ll learn how the clay is prepared, shaped and dried using traditional tools—some passed down through families—and how the outdoor kilns, fueled by pine and broom, are smothered post-fire with moss, earth and sand to lock in the signature matte-black finish. The method is entirely natural: no glaze, no paint, just earth and fire.

Under the artisan’s guidance, you’ll craft a piece using age-old techniques, then watch as it’s hardened by fire into a singular object. This rare-access experience is a private photoshoot with a real Maiko — a young woman apprenticing to become a Geisha. Maiko are renowned for their colorful kimono, elaborately styled hair, and refined manners. Most visitors are lucky to catch even a fleeting glimpse of them as they move quickly through Kyoto’s streets between appointments. Recent regulations protect Maiko from unwanted attention from tourists. But in this experience, you’ll have the privilege of spending relaxed, uninterrupted time photographing and engaging with a Maiko.

The photo shoot takes place at Chionsha, a one-of-a-kind heritage house in Kyoto – the perfect, atmospheric backdrop for the session. Under the guidance of a professional expert photographer, you’ll learn how to use both natural and artificial light to create evocative portraits. You'll also practice how to work with a live subject — learning and practicing how to pose and frame your subject to evoke emotion and tell a story through your lens. 

This fully private session offers an extraordinary opportunity to interact with a Maiko while learning professional portraiture techniques. An entire historic house in Kyoto is reserved exclusively for your session — offering creative freedom to explore light, setting and subject. Daniel Flores is a Mexican artist and the director of the Producción Gráfica Zanate printmaking workshop. He specializes in graphic arts and printmaking and has participated in numerous group exhibitions throughout Mexico and internationally. He has also received several grants for projects focused on graphic and plastic arts production within various communities across the state of Oaxaca. Daniel has been working professionally in the Mexican art world since 2002.

He founded Gráfica Zanate in 2007, and the studio continues to produce annual printmaking portfolios in collaboration with artists from Oaxaca, Puebla, Mexico City, and abroad.

Alongside Daniel, the "maestro" of Gráfica Zanate, you’ll meet the studio’s team of experienced local artists: Viridiana Carmona, Marco Patiño, and Marco Antonio Santos.

In this mindful bread-making session in Athens, you will recreate ‘pelanos,’ the sacred bread of the ancients, offered to honor the gifts of nature. This transformative journey takes you back to the Great Mysteries of Eleusis, where the myths of Demeter, the goddess of the harvest, and her daughter Persephone come to life.

According to the myth, when Demeter found Persephone, who had been taken by Hades, the god of the underworld, she gifted humanity with the grain of wheat and taught them bread-making to escape famine.

You will engage in hands-on bread-making, learning traditional techniques passed down from ancient Greece. Each knead and fold becomes an act of connection—with food, community and the earth.

A short guided hike of roughly two hours will take you to a series of caves featuring rustic paintings and traces of human habitation dating back over 10,000 years. They depict the early domestication period of the Zapotec people, when their ancestors first settled here as hunter-gatherers. These caverns are part of a larger network of over 200 caves in Yagul, where the earliest remnants of domesticated corn—a tiny and now obsolete variety known as teocintle—were discovered. This entire area was designated a UNESCO World Heritage Site in 2010.

As these caves are protected and the town operates under Indigenous law, it’s required that we travel with a local guide provided by the pueblo’s government office.

After the hike, we’ll continue the corn theme with lunch at a local restaurant, sampling one of the most iconic corn-based dishes in Oaxaca: the tlayuda. We’ll share a variety of styles, along with a refreshing non-alcoholic agua fresca.

This hike is a chance to appreciate the splendor of the Oaxacan countryside and gain insight into the earliest Zapotec people who settled in this land. Your host, a long-time Oaxaca resident with strong connections to this community, will arrange the hike with a guide from the local government office to ensure the experience complies with Indigenous law for this protected area. Participants can specify whether they would like the tour in English or Spanish. This offers unmatched insight into the history and ecology of the region.

You’ll then explore the magic of corn firsthand by trying one of Oaxaca’s most iconic delicacies—the tlayuda. This itinerary reflects what Manila calls the “true essence of Catalonia” — a place of cultural pride, natural beauty, and distinct local identity. Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

The Akrotiri Lighthouse, perched on the southwestern tip of Santorini, is one of the island’s most iconic and scenic landmarks. Built in 1892, this historic lighthouse is renowned for its stunning views of the Aegean Sea and dramatic sunsets. While the lighthouse itself is not open to the public, the surrounding area offers a peaceful and picturesque spot to admire the rugged coastline and soak in the natural beauty of Santorini. 
1. The panoramic views from the lighthouse are breathtaking, offering sweeping vistas of the caldera, the Aegean Sea, and the cliffs of Santorini. 
2. The sunset experience here rivals that of Oia, but with far fewer crowds, making it a more tranquil and intimate spot to watch the day end.

Jamaica

The Caves in Negril offers a unique and exhilarating experience for those seeking adventure in a breathtakingly beautiful setting. Perched atop honeycomb cliffs formed by volcanic activity, The Caves is a gateway to thrilling cliff diving and cave swimming experiences.

The natural structure of the cliffs at The Caves makes them an ideal location for cliff diving. The walls of the resort are a veritable museum of ancient fossilized marine life and provide a variety of diving spots. 

As guests at The Caves, we were encouraged to take early morning dives from the cliffs, with jumps ranging from 8 ft to 30 ft, and there's even a jump inside a cave for the more daring. 

Despite the excitement of cliff diving, it's important to approach this activity with caution. The heights can be intimidating, and the water can appear menacing, especially when the weather is not ideal. So be careful and always go with a companion.
