The Venice Carnevale has deep-rooted origins dating back to the era of the "Serenissima." This six-hour asado experience in Valparaíso is the most authentic Chilean barbecue experience you'll find in the Fifth Region. Not only is your host an expert guide born and raised in the seaport, but he is also an avid grill master. The experience starts with the purchase of ingredients from Juan Víctor’s local feria (market). You’ll pick up fresh herbs and vegetables while chatting to vendors and immersing yourself in the scents, textures, and sounds of the market. As no Chilean meal is complete without wine, you will also purchase some regional Carménère and Sauvignon Cabernet.

Once at Juan Víctor’s family home, you will prepare the asado using his self-built brick parrilla. This includes chopping aji (chili) and tomatoes for pebre (Chilean salsa), tending to the charcoal, or priming marraqueta (bread rolls) for the starter of choripan (chorizo sausages). The experience is delivered at an unhurried pace with emphasis on sharing stories and truly understanding the culture of asado.

Dining in Chile goes beyond what appears on the menu. Food is a cultural exchange — anything placed on the table is for sharing, no meal is hurried, and stories are the main course. This is a scenic day hike across the Kik Plateau, perched at approximately 1,800 meters in the High Atlas Mountains. The trek offers sweeping views over terraced farmland, Lake Takerkoust, and distant peaks, including Mount Toubkal. 

Starting from Asni, the route winds through traditional Berber villages built from earth and stone, where daily life continues much as it has for generations. Along the way, you’ll stop for tea with a local family and enjoy a picnic lunch in the heart of the plateau, surrounded by olive groves and open sky.

This hike is ideal for those who’ve already seen the classic Atlas mountain routes and want to explore the landscape further while engaging with the local communities. 

The walk takes 5-6 hours with stops and is best done in spring or autumn, when the plateau is green and the light is sharp. Though not technically difficult, there are some steady inclines and exposed terrain, so good walking shoes and sun protection are recommended.

The Kik Plateau offers an expansive, open landscape that contrasts with the steeper, more rugged trails of the central High Atlas. Its distinctive limestone outcroppings and gently undulating terrain give you a different kind of hiking experience—one defined by wide horizons and silence. From the plateau, you can take in panoramic views that stretch across the Haouz plains, Lake Takerkoust and the snow-capped peaks of the High Atlas.

You’ll walk through traditional Berber villages where adobe homes blend into the hillsides, and farming continues as it has for generations. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”

For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

We arrive by RIB boat from Longyearbyen, dressed in survival suits, across a choppy Arctic Sea, with puffins and seals for company.

Isfjord Radio on Cape Linné, is an abandoned strategic communications station, with a decidedly interesting past, now converted into a stylish expedition lodge. 

Nothing could have prepared me for the extreme sense of isolation and wilderness. 

Imagine sitting all alone at latitude 79 degrees north and watching polar bears prowling outside the kitchen window. Two days ago, that is exactly what the staff at Isfjord Radio did.  After all, Svalbard’s travel slogan reads: “3000 polar bears, 2500 humans”. 

Hiking into the middle of nowhere, or along the coast looking for 1500-kilo walruses, is done with licensed guides, a couple of mandatory rifles for protection and huskies for company. It is a beautiful, stark landscape, filled with mystery and a sense of the unknown.

Extreme Wilderness

Mexico

Mexico City, Mexico, is home to Templo Mayor, the heart of the ancient Aztec capital, Tenochtitlán. Discovered beneath the Zócalo (main square) in the 1970s, this archaeological site and museum showcases the remains of the Aztecs' most sacred temple, dedicated to Huitzilopochtli (god of war) and Tlaloc (god of rain). Walking through the ruins, visitors can imagine the grandeur of the Aztec empire before the arrival of the Spanish conquistadors.
