This workshop offers a first-hand experience of all the steps involved in the creation of the emblematic tapas of Spain. You’ll see the journey of creating a selection of tapas from market to the table. You will prepare the tapas under the guidance of the chef, who will explain the geographical origin of each dish, and share interesting facts and creative possibilities for their preparation. The hands-on experience is a crucial element. Following the preparation, there's the joy of tasting the creations, paired with traditional Spanish wines. This experience takes you into one of Portugal’s most iconic estates, Casa de Mateus, for a private tour and traditional lunch. Located near Vila Real, this 18th-century Baroque masterpiece was designed by Italian architect Nicolau Nasoni, whose work also defines much of Porto’s skyline.

After a traditional lunch, you'll be guided by a local expert photographer along this journey of cultural immersion and artistic exploration.

After honing his skills in England, he specialized in advertising, fashion, and design, working with prominent photographers and brands. As the son of a float constructor, Gianmario has always been closely involved in the creation of the floats and continues to collaborate in their construction.

It is also an open-air museum, rich in artworks and fascinating stories. You’ll walk through its monumental grounds, where over 150 years of history are carved in Carrara marble, and see family chapels echoing Florence’s greatest churches.

As you move among the tombs, Claudia will share the lives of those who rest here. Some are well-known figures, like Carlo Collodi, author of Pinocchio. Others are lesser-known but had lives that deserve to be remembered, with stories that reveal the spirit of their times. This photography experience takes place in the small coastal city of Concón, cocooned in the cliffs north of Valparaíso. You will explore three fragile ecosystems: the Concón Wetlands (Humedales de Concón), La Roca Oceánica (Ocean Rock), and the Dunes of Concón (Dunas de Concón). At each, you'll photograph flora and fauna under the mentorship of David, a local creative who grew up amid this windswept beauty spot. 

The experience takes place in the late afternoon and concludes with golden hour and sunset at the Dunes of Concón. Starting at the reed-lined wetlands, you'll encounter such birdlife as pelicans and perritos (white-backed stilts). Afterwards, you'll pause for coffee and empanada at Surf Beach (Playa La Boca). Frequented by local surfers—David included—this is an opportunity to flex your "moving target" skills! A small hike through the surreal dune system brings you to a vantage point from which you can take in panoramic views of the Pacific Ocean and Viña del Mar.

Concón is a hidden gem in Chile's Valparaíso Region. Inhabited by artists, families, young professionals, surfers, and gourmands, the city has a bohemian ambiance minus the bustle of its mother city. In this experience, you will visit the kinds of places locals hang out at weekends. From strolling along the wetlands—a beloved spot for birding and picnics—to cheering on surfers catching their first wave, this experience imbeds you into the village-like community. As a self-taught photographer, David has honed his talent working with both landscapes and portraiture. He has an experimental style and a keen eye for spotting easily-missed details He has a special ability to see the potential in the simple aspects of local reality and culture, and always seeks to capture them in an original way through his photography. He works with a Canon DSLR, using 50mm and 18-55mm lenses for regular shots and a 300mm lens to capture distant subjects with clarity and depth.

David draws upon his extensive archive of travel photography experiences while mentoring those visiting Valparaíso on how to capture the beauty of a location and why you should look beyond what's at eye level.

Mexico

Tucked inside a former 1920s textile factory in Colonia Doctores, Laguna is one of Mexico City’s most vibrant creative hubs — and one that few travelers even know exists. Renovated in 2018 by Mexican firm Productora, the building is now a hybrid urban factory, housing studios, galleries, showrooms, and cultural spaces — but from the street, you'd never guess what’s inside.

This experience introduces you to people who make Laguna's creative community and vision: artists, designers and producers. You'll hear from people involved in the site's redevelopment and cultural programming and explore how the space functions as both a collective and an incubator for contemporary creativity.

Along the way, stop into textile showrooms and contemporary galleries. Enjoy a guided tasting at OHA, a studio dedicated to teas and herbal infusions from native plants. The visit ends with a glass of Mexican natural wine — a moment to reflect on the creative energy around you.
