Vatican City

An exclusive access route opens two spaces normally closed to regular visits. At the Bramante Staircase, you’ll see the original 1505 helical ramp built for papal carriage traffic, and when permitted, you could climb it to experience the shallow, continuous slope and feel how it was made to move people and horses. A calçotada is a seasonal Catalan ritual (November–April) centered on the communal roasting and eating of calçots - sweeter, elongated onion-like shoot cultivated in trenches.  

You’ll depart Barcelona in private car, into the Catalan countryside. Your destination: a working garden where calçots (pronounced kal-sotz) are grown, harvested and prepared over open fire. 

Along the way, you’ll stop at the Royal Monastery of Santes Creus, a medieval Cistercian abbey built in 12th century, with Gothic cloisters, royal tombs and austere architectural purity.  

At the garden, you’ll meet the farming family and learn about the cultivation of calçots. Then comes the feast: calçots grilled until the outer layers blacken, wrapped in newspaper to steam and eaten by hand — peeling away charred exteriors and dipping each stalk into romesco (or a similar sauce). Expect to get your fingers messy, and partake in what is, by design, a convivial, generous meal. This is as farm-to-table fresh as it gets.

Alex’s earliest memory is a family visit to Tijuana—an experience that sparked a lasting fascination with the people and heritage of Mexico. While at university, he focused his studies and research on the Hispanic cultural heritage of the American Southwest and Mexico.

Chile

This adventurous hike is a 5km (3 mile) circuit (moderate difficulty) in the canyons of Atacama Desert's Salt Mountain Range (Cordillera de la Sal). A 50-minute drive delivers you amid this wilderness area beyond highly-trafficked Moon Valley. While the scenery is comparable with those Martian landscapes, this trek sits off the radar and cultivates a deeper connection with this remote region in northern Chile. Guided by Valeria, a naturalist and conservationist, you'll be urged to absorb the stunning nature and geology—and study 1000-year-old petroglyphs.
 
Bear in mind this excursion is suitable only for those with a decent level of fitness and physical mobility. The route involves one steep descent with loose terrain, a few river crossings, and wading through the cold-water river in the slot canyon. Hiking poles are provided and you'll need to rely on your hands for rocky obstacles. Typically taking 3.5 hours to complete the loop, Valeria will pace the trek to suit your capabilities.

Hiking in the world's driest non-polar desert at a 2,500 m.a.s.l. is no walk in the park! It is, however, the quest of a lifetime—and it's made all the better when you have a local naturalist handling the route, keeping you safe, and sharing intricate information about the ecosystem and its communities. Along the course of this moderate hike, Valeria will pause to educate you on the slot canyon and share insight on the region's wildlife—you may even encounter native and migratory birds.

After taking in the Andes and the dunes of the Salt Mountain Range from afar, you'll descend into the canyon and let the Rio Grande guide the way. This eventually turns into a stunning slot canyon which you'll pass by wading through the river (depth ranges from ankle to hips level)—it's the perfect antidote to those scorching summer temperatures. The Man Who Built the Coolest Bar in the World. That would be a Jamaican fisherman from Saint Elizabeth called Floyd who thought it would be nice to have a place where he and his buddies could hang out to and from their fishing ventures. He built the bar on a sandbar a mile off the coast in Parottee Bay out of driftwood (the wood was restored after Hurricane Ivan in 2004). In between dips in the turquoise water, you can sip a Red Stripe, eat freshly grilled snapper and play dominoes. Or catch up with Floyd at the bar. Someday, I’d like to watch the sunset from there.

Late evening photo session at the Fushimi Inari Shrine in Kyoto. Its 10,000 torii gates cast criss-crossing shadows into the night.

This Shinto shrine has a very mystical quality, especially when it’s pitch dark, with no people around. Perfect for long 20-second exposures to capture the light and the shadows. Or “light painting” with a flashlight. 

That’s me brandishing a lightsaber and painting with it  Now imagine this as a Star Wars location for a fight scene. 

In between sets of Torii Gates, there are family shrines which are even more special, complete with miniature Torii, candlesticks and kitsune.
