What is this?
Guadalajara's Mercado Libertad is the largest indoor market in Latin America. Three thousand stalls sit across three levels drawing 35,000 people a day. Diego takes you through the food that defines Jalisco — the food he grew up eating at these very stalls: birria, barbacoa, tortas ahogadas, pozole, tacos al pastor, fresh fish tacos, seasonal fruits and artisanal candies.
You stop at family-run stands. Felipe and Maru have run their barbacoa taco stand since 2002; they share their family story and the deep cultural roots of barbacoa in Jalisco. At Rocío's stand — open since 1983 — you taste tortas ahogadas: birote salado bread from a Belgian baker who arrived with Emperor Maximilian in 1864, Spanish colonial pork carnitas, and Indigenous chile de árbol salsa. Three histories in one drowned sandwich.
From the market you walk through the historic centre with Diego to orient yourself — Plaza Tapatía, cathedral, arcades. The tour closes at a cantina, with a tasting of artisanal tequilas.
What makes this unique?
This tour is designed to get you in direct conversation with the people of Guadalajara — and there's no better connector than food. Diego has been eating at these market stands for years. Felipe and Maru know him; Rocío knows him. When he walks in with his guests, the welcome is the one you get when you're brought in by a regular.
Mercado Libertad is where the word "tapatío" was born. It comes from the Nahuatl "tapatiotl," a unit of three used in the market's bartering trade. Diego points out other connections between history and the food as you walk through the historic center — how Indigenous, Spanish and later European arrivals shaped both the plates and the plazas.
The tour closes at an old-school cantina — the kind slowly disappearing across Mexico. Tiled floors, wooden tables, small plates of botana arriving between drinks in the traditional pattern. You're introduced to three tequilas from small family producers Diego has come to know and you'll decide which one you like best.
What is the profile of the host?
Diego was born and raised in Guadalajara. After years living in Canada, New Zealand, and the US, he came home to study tourism and local economic development at Universidad de Guadalajara. His tours are built around daily life in Guadalajara rather than its highlights — the neighbourhoods, plazas, and markets he grew up in, where you can engage with people in the community.
