What is this?

This experience explores how ingredients once considered ordinary — or even discarded — became markers of high-end dining and social distinction. You walk through Bordeaux’s Golden Triangle, an area known for historic restaurants, refined food shops, and a long dining tradition, including the city’s oldest restaurant. Anne, a chef with deep knowledge of food culture in Bordeaux and the South West of France, guides the experience and sets the context for each stop. Along the way, you meet local shop owners who produce or source these ingredients and chefs who work with them daily. Anne has visited the farms behind many of these products and explains how they are produced, how their status has evolved over time, and how they are used in contemporary cooking. Tastings are woven into the walk, focusing on oysters, foie gras, caviar, and specialties unique to the South West of France — and how best to enjoy them.

What makes this unique?

What sets this experience apart is Anne’s perspective as a working chef who understands the food of the South West of France from the inside. Her long professional experience gives her a direct, confident way of speaking about ingredients that feels grounded and precise. Anne moves naturally between the evolution of taste and the historical forces that shaped it — from preservation techniques along the Atlantic coast to courtly dining culture and modern gastronomy — linking ingredients to the territories they come from and the people who produce them. Food is never isolated; it is placed within a broader narrative of geography, history, status, and continuity. She follows each ingredient along its human path — from producer to shop to kitchen — turning products often reduced to luxury labels into stories of labor, land, and shifting social meaning. The result is an experience rooted in real food culture rather than prestige alone.

What is the profile of the host?

Anne Jordan, chef and guide with over thirteen years of experience, has lived in Bazas since the very moment she and her husband visited the village and decided to stay, a decade ago. She has cooked in private yachting and in Michelin restaurants in Paris before making her home in the French countryside. Her training as a chef and her work as a guide shape the way she leads you through the flavors of the region around Bordeaux. She cares about seasonal and local food and has met many of the people who grow and prepare it, approaching each encounter with genuine curiosity and interest in food as culture and conviviality.
