A short guided hike of roughly two hours will take you to a series of caves featuring rustic paintings and traces of human habitation dating back over 10,000 years. They depict the early domestication period of the Zapotec people, when their ancestors first settled here as hunter-gatherers. These caverns are part of a larger network of over 200 caves in Yagul, where the earliest remnants of domesticated corn—a tiny and now obsolete variety known as teocintle—were discovered. This entire area was designated a UNESCO World Heritage Site in 2010.

As these caves are protected and the town operates under Indigenous law, it’s required that we travel with a local guide provided by the pueblo’s government office.

After the hike, we’ll continue the corn theme with lunch at a local restaurant, sampling one of the most iconic corn-based dishes in Oaxaca: the tlayuda. We’ll share a variety of styles, along with a refreshing non-alcoholic agua fresca.

This hike is a chance to appreciate the splendor of the Oaxacan countryside and gain insight into the earliest Zapotec people who settled in this land. Your host, a long-time Oaxaca resident with strong connections to this community, will arrange the hike with a guide from the local government office to ensure the experience complies with Indigenous law for this protected area. Participants can specify whether they would like the tour in English or Spanish. This offers unmatched insight into the history and ecology of the region.

You’ll then explore the magic of corn firsthand by trying one of Oaxaca’s most iconic delicacies—the tlayuda. Your host will transport you from the hike to one of the best venues near the city to enjoy this celebrated dish, then return you to your original meeting point once the meal is done. We recommend wearing sturdy, comfortable shoes. Flip-flops and sandals are not advised to avoid potential injury. You may also want to bring some cash in pesos in case you wish to purchase anything beyond the included meal and drinks.

Discover the world of Mexican plants and the importance of gardens and green spaces in urban settings. You'll be welcomed into a private rooftop garden in the heart of Condesa, Mexico City. Here you’ll find more than thirty species of native flora, planted to attract pollinators, provide food and medicine, and serve as a living lab for textile and dye experimentation.

You'll learn about the history and cultural value of these plants native to the Valley of Mexico — including dye species such as marigold (cempasúchil), pericón, and muicle, used for centuries as pigments for textiles and paints. These plants are living symbols of tradition and ancestral knowledge, a heritage you’ll explore through hands-on learning. More than just a place for bathing, it served as a hub of social life, physical training, and political networking for thousands of Romans every day.

As you walk through towering brick walls, crumbling vaults, and surviving mosaic floors, you’ll gain insight into the sophisticated engineering that powered these baths—from underground furnaces to a complex water supply system. Along the way, you’ll learn how the site reflected the ambitions of a ruler who sought to project strength through monumental architecture.

Through archaeology, stories, and visual traces, Chiara will show you how daily rituals and imperial ideals came together in one of ancient Rome’s most advanced public buildings.

This immersive experience invites you to discover the delicate and mesmerizing art of Ebru marbling on fabric, a centuries-old Turkish craft that transforms floating pigments into intricate patterns. Traditionally used to decorate manuscripts, textiles, and ceramics, Ebru has been cherished in Turkey since the Ottoman era, blending artistic expression with meditative practice.

Set in a tranquil Istanbul gallery, this hands-on session begins with an introduction to Ebru’s rich history and cultural significance. You’ll observe a live demonstration by a master artist, learning the techniques of working with fabric—how to prepare the base, control the pigments, and create balanced, flowing designs. Using natural earth pigments, you’ll craft a vibrant scarf, watching colors float, swirl, and settle into intricate shapes before being transferred onto fabric. By the end of the session, you’ll take home a unique wearable piece of Turkish heritage.

Unlike traditional paper marbling, this experience explores the delicate and complex process of marbling on fabric, a technique requiring precision, patience, and expert guidance. Textiles absorb pigments differently than paper, making the final result even more dynamic and unpredictable—each piece is truly one-of-a-kind. Guided by Nesi, a master Ebru artist, you’ll learn the secrets of adapting marbling techniques to textiles, controlling color diffusion, and achieving stunning, fluid designs. Beyond the hands-on workshop, you’ll also gain insight into Ebru’s deeper symbolism—how patterns like “battal” (stone), “nightingale’s nest,” and floral motifs reflect nature, spirituality, and the interconnectedness of life. Nesime Kantar is a highly respected Ebru artist and educator specializing in textile marbling. A graduate of Mimar Sinan University, she trained under master calligraphers and marblers, refining her expertise in both traditional and contemporary applications of Ebru. With over two decades of experience, Nesime has been leading workshops at her Galatart Ebru Workshop in Istanbul since 2009. Her passion for preserving Turkish marbling has led her to explore its many forms, from bookbinding to fabric design. She has perfected the intricate process of transferring Ebru onto textiles, creating wearable and decorative artworks that honor this historic craft. Through her engaging workshops, Nesime not only teaches technique but also shares the rich symbolism and meditative qualities of Ebru, ensuring that each participant leaves with a deeper appreciation for this living tradition.

You begin at National Museum of Anthropology, one of the world’s most remarkable cultural institutions. The building itself is an icon of modern Mexican architecture — a vast courtyard shaded by a monumental concrete “umbrella,” its single central column carved with mythic reliefs.

Inside, you move through galleries that feel like time slowed down. Among the most famous pieces are the Aztec Sun Stone, a massive calendar disk that encodes the Aztec cosmos, and the colossal Olmec heads carved from basalt. Anthropology Museum

If you choose Chapultepec Castle instead of Museo Tamayo, Andrea will arrange to visit this first — so you can make the climb while the hill is still cool and shaded.

Perched high above the city, the castle commands sweeping views of the valley and stands as a symbol of Mexico’s layered history. Built in the late 18th century, it has served many lives — first as colonial palace, then as residence of Emperor Maximilian I and Empress Carlota during the Second Mexican Empire, and later as official home of Mexico’s presidents. Today, it houses the National Museum of History, where rooms are preserved with 19th-century furnishings, imperial artifacts, and murals tracing the country’s struggle for independence and revolution.

Highlights include Maximilian’s ornate chambers, the Hall of Battles, and murals by Diego Rivera and other great Mexican artists. From the terraces, weather/visibility permitting, you can see the city stretching below — green canopy to skyline.

After your morning exploration through Mexico’s past and modern expressions, Andrea will take you to a restaurant for an extensive lunch where you'll get to try various dishes representing some of the best of Mexico City cuisine.

From there, you visit the Sala de Arte Público Siqueiros, a remarkable insitution that preserves the experimental studio and public mission of David Alfaro Siqueiros, one of Mexico’s great muralists. Housed in the artist’s former home and workshop, the building still bears the traces of his process — large-scale murals, technical studies, and the curved walls designed for his “Polyangular” method, meant to let art move with the viewer.

You walk the line between art and activism, between creation and conviction — a fitting conclusion to the day.

The afternoon seeks to tie the day’s themes together: Mexico’s art as memory, power, and reinvention. From the moment we stepped into the Cook Shop, all our senses were engaged. The local scenes, the staff busy with their preparation and the aromas from the kitchen. But it was Chris's warm welcome that made the experience truly unforgettable. We chopped, marinated, and grilled under his guidance, learning the art of his signature jerk chicken and curry goat. Then we gathered on his rooftop deck overlooking James Bond Beach in the distance – a lovely backdrop to our culinary adventure - to eat together. We savored the dishes we helped create, and Chef Chris even shared a packet of his secret curry powder for us to take home.
