A day trip from Madrid into the Rueda wine country of Castilla y León — home of Verdejo, Spain's great white grape — for a vineyard visit and a slow lunch or dinner of Castilian lamb.

You're driven north from Madrid, two hours, to Pozaldez — a village in the heart of the Rueda appellation whose subsoil is honeycombed with more than a hundred underground wine cellars. A winemaker walks you through the vineyards, explaining how Verdejo is grown on this high, stony plateau. A Verdejo tasting follows. Then comes lechazo — milk-fed Castilian lamb, slow-roasted in a wood-fired clay oven — the Sunday-table centerpiece of Castilla y León, paired with the region's wine.

The day is offered two ways: an 8 AM departure that arrives mid-morning and includes lunch, or a 4 PM departure that arrives in the afternoon light, with dinner. “Vino de Rueda bebo, siempre que puedo” — wine of Rueda I drink, whenever I can, says an old Castilian saying affectionately about Rueda. Verdejo has grown here since the 11th century, but phylloxera destroyed the vineyards in the late 1800s. In the 1970s a handful of winemakers reinvented it — fresh, cold-fermented, picked at night — and turned Verdejo into the white wine Spain now drinks more than any other.

Rueda is Spain's great white region but it sees few visitors — most head to Rioja or Ribera del Duero. What Reyes has arranged is not a commercial winery tour. You’re walked through the vineyards by someone who grows the grape, then taken into an old underground cellar of Pozaldez — whose name, Pozal de Hez, means "abundance of wine" — and sat down to a proper lechazo roasted slowly in a wood-fired oven. None of it is a tasting-room queue or a booking-desk transaction; it’s a working village opened up through relationships built over years. And at an easy distance from Madrid.

Your host collects you in Madrid and drives you north to Pozaldez, in the heart of the Rueda appellation — about two hours across the Castilian plateau. The same drive returns you at the end of the day.

Rueda sits on the high meseta, the tableland of Castilla y León, at seven hundred metres. It is close enough to Madrid for a day, far enough that few make the trip — most wine travelers turn and travel to Rioja instead. This transfer is private and arranged around your departure from your hotel; you neither drive nor navigate.

Verdejo has grown on this plateau since the 11th century, and some of Rueda's vines are pre-phylloxera survivors on their original rootstock, more than a hundred years old — spared because the louse that destroyed Europe's vineyards could not tunnel through the loose sand. A Walk in the Vineyards

Beneath Pozaldez runs a honeycomb of underground cellars — more than a hundred of them, dug by hand between the 15th and 18th centuries, reaching under nearly half the village. Your host takes you down into the narrow passages, the barrel vaults, and the clay tinajas set into the rock, where the wine was made and kept for centuries before refrigeration.

This is where Rueda's story turns. The Verdejo grown here was once made into an oxidized, sherry-like wine, aged underground in the cool and the dark — the style that fell out of fashion in the 20th century, when the grape was nearly abandoned. Few visitors go below ground in Pozaldez; the cellars belong to the families who dug them. Your host takes you into theirs.

A tasting of the family's Verdejo, led by your host. You taste the wine in its styles — the fresh, cold-fermented young Verdejo the region is known for, and where the family makes them, the fuller, lees-aged or barrel-fermented expressions that show what the grape can become with time.

Most Verdejo leaves Rueda in a bottle and is drunk fresh and young, far from where it grew. Tasting it here — poured by the family that grew and made it, in the village whose name means "abundance of wine" — is the wine in its own place, at its source. Verdejo the grape means "green"; you taste why in the glass.

The day's table is lechazo — milk-fed lamb, slow-roasted in a wood-fired clay oven until the meat falls from the bone and the skin crackles. It is the Sunday-table centerpiece of Castilla y León, paired with the wines of Rueda. On the morning departure it is lunch; on the afternoon departure, dinner.

Lechazo de Castilla y León is a protected designation. The lamb must be milk-fed and under thirty-five days old, roasted slowly the old way, in a wood-fired oven — a tradition that traces to the Celtic and Roman herders of the Duero basin. It grows from the same plateau as the Verdejo you drink with it. Eaten here, on the plateau that raised it, it is the region's own feast.
