This workshop offers a first-hand experience of all the steps involved in the creation of the emblematic tapas of Spain. You’ll see the journey of creating a selection of tapas from market to the table. You will prepare the tapas under the guidance of the chef, who will explain the geographical origin of each dish, and share interesting facts and creative possibilities for their preparation. The hands-on experience is a crucial element. Following the preparation, there's the joy of tasting the creations, paired with traditional Spanish wines. Italy

This experience begins with a walk through the historic center of Tempio Pausania, known as the “City of Stone” for its granite buildings. The route leads to the old railway station, a Liberty-style building opened in 1931, with original wooden interiors and pictures by Sardinian artist Giuseppe Biasi.

The highlight is a private, exclusive performance by the Coro Gabriel, one of Sardinia’s oldest vocal ensembles. They sing the tasgia, a rare polyphonic chant that evolved from the UNESCO-listed canto a tenore. Unlike its predecessor, the tasgia features all four voices singing lyrics and includes improvisational shifts in tone and harmony, echoing elements of jazz. With fewer than twenty practitioners left, this is a rare chance to hear it live.

Gianmario, a native of Tempio and a member of the choir, shares insights into this evolving tradition. His ties to the group offer an intimate perspective on Sardinian culture, set in the town that has long been the cultural heart of Gallura.

What makes this experience special is the rare chance to meet the singers themselves and hear the tasgia performed in a setting that enhances both its sound and meaning. The performance takes place inside Tempio’s old train station, a quiet, evocative building from the 1930s. It's the only public site in Sardinia where you can still see original murals by Giuseppe Biasi, one of Sardinia’s most important painters, whose work shaped the island’s modern visual identity.

In this hands-on experience, French fashion designer Clémentine opens up her world, sharing deep knowledge of kimono and obi through a relaxed creative workshop.

She’ll take you on a journey through time, explaining the evolution of these garments and how advances in textile manufacturing shaped their design. You'll explore different types of kimono, learn about their occasions and etiquette, and see up-close the textiles — brocade, silk, hand-dyed patterns — that make each piece distinct.

Then comes the transformation: choosing from Clémentine’s collection of vintage obi, you’ll design your own modern accessory — a pouch that breathes new life into traditional materials, letting you carry a piece of Japan with you.

While kimono remain an important part of Japanese tradition, many are worn only once — at weddings or formal events — then stored away and forgotten. Clémentine’s workshop honors these garments and the artisans behind them by giving the fabric new purpose.

Her shop is rooted in upcycling, but it’s more than sustainability: it’s about artful transformation. She selects obi with patterns too bold or ornate for modern daily wear, and turns them into striking, functional accessories. In doing so, she reconnects this heritage craft with everyday life.

France

Get out of the city of Bordeaux to spend the day in the countryside villages of the Gironde. You meet Anne in Langon and explore one of the best open-air markets along the banks of the Garonne River. At the market, you enjoy tastings guided by Anne, a chef who lives in the surrounding countryside, regularly shops here, and knows the producers and vendors personally. Together, you purchase a selection of products to share later for lunch.

After the market, Anne takes you to Bazas, the most important town between Bordeaux and Toulouse for nearly 2,000 years. Here, you walk through the village’s historic center, following Roman traces and learning about its links to Henry IV and Château Haut-Brion.

For lunch, you can choose to enjoy what you bought at the market with Anne as guests in a local hotel’s dining room, or sit at a restaurant on the cathedral square. After lunch, you have some time to continue exploring the village, before returning to Bordeaux.

This day is built around places that sit outside the usual visitor routes — working villages where the market still sets the rhythm. Growing up on the city’s outskirts, it wasn’t until returning after time abroad that he saw it anew. “It was as a young and independent adult with an arts and architecture degree, and with the enthusiasm to explore — that I realized how beautiful, diverse, and interesting my city is.”
For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

Manila first arrived in Barcelona more than two decades ago, while finishing her studies in Rome. She needed an internship for her thesis and chose Barcelona without expecting how quickly she’d feel at home.“Barcelona, 22 years ago, was a different place,” she says. “It was less cosmopolitan, more local. I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

You begin in Dubrovnik, not just walking its walls but seeing it with new eyes—through a local archaeologist’s lens, then from a boat at sunset, where the city turns gold against the sea. In Split, Diocletian’s Palace is less a monument than a lived-in maze, full of locals and light. The journey pauses briefly in Trogir—an island town where everything slows naturally—and optionally detours into Istria for hill towns, truffle hunting, and wine trails.

Inland, Plitvice Lakes shifts the tone again. Here, you follow paths through mist and waterfalls, letting the natural rhythm reset your pace. It’s not just a break between cities; it’s a space to recalibrate.

Ljubljana greets you with quiet confidence. A walkable capital, it pairs Baroque charm with bold design and street art. You’ll move from riverbanks to castle views to the experimental district of Metelkova, all at a pace that invites observation.

You end in Trieste, where languages and histories mingle. This last chapter offers options—Karst wine tastings, Austro-Italian cafés, or a final walk along the sea. It’s a soft landing, full of contrasts and continuity.

Ecuador

Visiting Quito, a detour should be made to the “ACTUAL Equator” museum. Only a 50 meters from where it was thought the equator passed, this used science to actually find the equator. The tour guide explains a bit about Ecuador and then shows why this is the center of the earth, with a few fun examples. The water really does flush in the opposite direction in the Southern Hemisphere and apparently this is due to the Earth’s centripetal force.

The Actual center of the world

The narrow, bustling alleys illuminated by rays of light filtering through makeshift coverings are a common sight in the Medina of Fes, where the blend of shadow and light creates a mysterious and historical ambiance, perfect for exploring on foot. It's an excellent depiction of daily life within the heart of Fes, showcasing the energy and the dense social fabric of this ancient city.

The contrast between the high-heeled boots that seem to be the footwear of choice for young women in wintertime and how Fes is rooted in time is a stark contrast of the past, present, and future that all exist. Marrakech’s medina had felt medieval, but it cannot compare with the proud, faded, crumbling, stately stance of Fes. The architecture is more intricate, the medersas older, the beliefs stauncher, and the passages more secretive.

I step aside just in time as I hear the chant – “Balak, balak” (watch out, watch out) – and a mule laden with fruits saunters past. Mules aren’t officially allowed, says my guide Karima, pointing to a sign at one of the doors of the medina. She’s taken it upon herself to quiz me about Arabic words. What is ‘door’ in Arabic? That’s easy, I say, pointing to the sign at one of the medina entrances, Bab ____ (pronounced not unlike the name ‘Bob’!).

The most memorable sound? Place Seffarine, a square known for its rhythmic orchestra: metal clanging on metal, non-stop throughout the day. Under the protection of a centuries-old tree, talented craftsmen hammer and sculpt copper pots and pans in cacophonous harmony. We sipped mint tea and people-watched, entranced, for a whole hour.

Fes Medina: Bab To Bab

Fruity, dry, red, white, sweet, sparkling — wine is delicious, and the best way to discover what this powerful potion has to offer is to take a bike tour through the vineyards (yes, on a bike). Mendoza is the best place to choose one of the hundreds of tour operators. 

Mendoza is the most popular wine-growing province in Argentina. And Bodega Tempus Alba has a perfect climate for growing high-quality grapes, and the majestic Andes Mountains provide the backdrop for some of the most beautiful pictures of vineyards to be found anywhere in the world.

Whether you're biking or not, a proper tasting tour will give you enough wine to come home tipsy. That's why I recommend eating well before your tour and taking a break when the magic of wine goes to your head.

I also spent some time hiking in the area, exploring the small villages in the area, and eating the best Argentine empanadas around. A trip for the senses, for sure.

I am completely fascinated by Buddhist prayer wheels. Our guide tells us that we should walk clockwise, turning the wheel and chanting, “Om Mani Padme Hum”. “Will that give me extra strength to climb up to the Tiger’s Nest monastery tomorrow?”, I ask him. “Absolutely”, he says earnestly. Well, at least one of us has faith, I think to myself.

Paro Taktsang - or Tiger’s Nest monastery - hangs off a cliff at a dizzying 10,240 feet over the Paro Valley. It’s a 5 hour climb, punctuated with lunch. Not too tough, as it turns out. I must be fitter than I think. But the guide reminds me - “See, I told you so”. 

The hike (including getting to the trailhead) takes about 6-7 hours, depending on how much time you spend at the monastery. 4 miles round trip on a wide dirt trail. At the halfway point is a cafeteria - and for most people, getting to this point is the toughest part of the hike. Beyond this, both the scenery and the difficulty of the climb are in your favor.

Hope, Faith and Happiness

Antalya, Turkey, is home to the Kurşunlu Waterfall Nature Park, a hidden gem nestled within a lush pine forest just 20 km (12 miles) from the city center. La Tonnara in Marzamemi, a picturesque fishing village, offers visitors a unique insight into the region's rich maritime history and culture. This historic tuna fishery, one of the oldest in Italy, stands as a testament to the traditional methods of tuna fishing that have been a part of Sicilian life for centuries. Here's what makes La Tonnara in Marzamemi special:

The riad sends a donkey called Couscous to meet us and pick up the luggage; the taxi will only go so far into the medina. 

As our merry procession winds through the narrow, confusing alleyways, we panic slightly. No problem, says a djelleba-clad staff member, you’ll have a map and cell phone to call if you’re lost. But he graciously accompanies us to our dinner booking and explains how we should get back to the riad. We leave invisible bread crumbs along the way – kebab shop, sweets stall, bakery etc. 

After a long meal, at 11:30 pm, the souks have closed, the streets look very different, and our bread crumbs have obviously gone to bed. It takes two wrong turns and much poring over the map before we find our way back. Our sense of adventure is fully piqued. 

Inside, the restored riad is palatial, with courtyards, heated pool, tiled terraces and stylish artwork. Breakfast is whenever you want, and wherever, says the charming Afaf. 

Shall we move in permanently, we wonder.
