Chile

Round off a day exploring the UNESCO World Heritage Site of Valparaíso by experiencing an authentic asado chileno with a local guide and grill master born and raised in the seaport. This three-hour barbecue experience is a personal invitation to partake in a beloved food experience rooted in convivencia (togetherness). Upon arrival at Juan Víctor’s family residence, you will be greeted with homemade empanadas and a pisco sour (Chile’s national cocktail). Chorizo sausages and premium cuts of beef are slowly cooked over an open flame, allowing plenty of time to chat with Juan Víctor over a glass of Carménère wine. 

In the sprit of convivencia, you are likely to be joined by some of Juan Víctor's relatives, friends, and neighbors. Together, you will bite into sizzling choripanes (chorizo sausages served on crusty marraqueta bread) and strips of meat fresh from the grill. The conversation will flow and you will return to your hotel with a full stomach and a happy heart. 

This experience invites you to partake in a traditional Chilean barbecue with a porteño and his family in Valparaíso. Juan Víctor’s mission is to introduce you to the highest-quality meat (or plant-based alternatives) in the relaxed, intimate environment of a local household. This historical walk traces Thessaloniki’s development from antiquity through Byzantine and Ottoman periods, using its religious and civic architecture. You begin at Trigoniou Tower, along the northern walls, where the city’s layered geography is visible from above. Then you follow the line of Byzantine fortifications toward the Monastery of Vlatadon, traditionally linked to the presence of Saint Paul.

The route then descends into the historic city. You visit the small church of Hosios David, known for Christian mosaics, before passing the Ottoman Alatza Imaret and continuing to the Church of Saint Demetrios, Thessaloniki’s most important Byzantine monument. 

From there, the walk continues through the Roman Forum and the Rotunda, originally built as a Roman monument and later adapted for Christian worship. The Navigli Canals

The historical Tavira, a captivating town in the Algarve region of Portugal, was one of the first Phoenician settlements in the Iberian West. Tavira's unique blend of historical influences, from its Moorish occupation to the Christian reconquest, has left a rich architectural and cultural legacy. Top 5 highlights:
- Tavira was a significant Moorish stronghold from the 8th to the 13th centuries. The town still reflects this era with its whitewashed buildings, distinctive Moorish-style doors, and rooftops. Visit the Tavira Castle, originally built by the Moors, and the historic Roman bridge, which was later determined to be a Moorish bridge from the 12th century.
- Discover the dramatic history of Tavira's reconquest in 1242 by Dom Paio Peres Correia. This pivotal event marked the town's transition from Moorish to Christian rule. Explore the Santa Maria do Castelo Church, built on the site of a former mosque, which now houses the tombs of Dom Paio and his knights.

Timeless Charm: Tavira

In Marrakech, explore the labyrinth of the medina, lined with market stalls and craftspeople, and full of secret places and contradictions. 

Anonymous, windowless, fortress-like walls enclose luxurious riads built around tiled courtyards, complete with fountains and gardens.

Happily, my wonderful guide Khadija of Morocco Private Experience, encourages my curiosity. She leads the way across the medieval labyrinth of chaotic alleyways - to the souks where centuries-old skills continue to flourish. 

I am intrigued about how all the craftspeople are clustered together by trade. We watch a metal craftsman shape a pair of gnawa cymbals. A leatherworker allows me inside his workshop for a better view. There is an entire street of ornate lantern sellers - the bronze-latticed lanterns competing with the palm-leafed roofs of the souks in throwing light-and-shadow patterns all around.

Heart and Souk

Antalya, Turkey, is home to the Tünektepe Cable Car (Tünektepe Teleferik), a breathtaking ride that takes visitors up to 618 meters (2,028 feet) above sea level for panoramic views of Antalya, the Mediterranean Sea, and the Taurus Mountains. Offering a perfect blend of adventure and scenery, this cable car experience is a must-do for nature lovers, photographers, and anyone wanting a bird’s-eye view of one of Turkey’s most beautiful coastal cities.

1. Scenic 9-minute ride in a modern cable car, ascending from Sarısu Station to the summit, offering unparalleled views of Antalya’s coastline and mountain landscape.

Nestled within the vibrant Mouassine district of Marrakesh’s old medina, the Mouassine Museum of Music offers a captivating window into Morocco’s diverse musical traditions. Housed in a meticulously restored 17th-century riad, the museum is part of the historic Mouassine complex, which includes a mosque, fountain, and library. Balat and Fener, two charming neighborhoods on the Golden Horn in Istanbul, offer a captivating blend of vibrant history, colorful streets, and multicultural heritage. These areas, once home to thriving Jewish and Greek communities, now invite visitors to wander their labyrinthine streets, where every corner tells a story of the city’s layered past. The juxtaposition of historic wooden houses with contemporary art galleries and cozy cafes creates a unique atmosphere that combines nostalgia with modern vibrancy.

1. Colorful Wooden Houses: Stroll down Kiremit Street to admire rows of brightly painted, Ottoman-era wooden houses. Their whimsical colors and intricate details make them a photographer’s dream.

Ecuador

Having a background in biology, coming to the Galapagos was absolutely a bucket list trip. The trip is worth going if you have three to seven days, depending on how much you want to see. I was there for three days and I could have discovered more islands. 

It is important to have a tour guide as you are not allowed to venture outside the town without one. 

Definitely worth a visit!
