Corn has been a core element of the Mexican diet for thousands of years. Archaeologists have found maize cobs dating back to 4300 BC. Traditionally, the ingredient represented sustenance, fertility, and ancestral wisdom.

In this food workshop, you'll discover why corn is a much more diverse plant than you might imagine. You will also learn, hands-on, using traditional tools and the Nixtamal process, how to transform this magical ingredient into a tortilla.

After making your own quesadilla and salsa, you'll take a brief walk through the neighborhood and enjoy a couple of taquería pit stops. For Tiago, connecting with a culture means full immersion. “You have to experience it with open eyes, heart, and mind,” he says. That means talking to locals, walking unfamiliar routes, listening more than looking. “Lisbon isn’t just to be seen, but touched, smelled, and tasted.” It’s not a checklist—it’s a presence.
He also names two challenges: First, Lisbon’s historic neighborhoods are deeply distinct—each like its own mini-city. “Lisbon is multidimensional. It cannot—and should not—be rushed.” Second, mass tourism threatens the local character he cherishes. Responsible travel, he says, is essential to preserve the culture.

El Caminito in La Boca

Initially a medieval fortress, it now boasts the Renaissance grandeur of the Salone dei Cinquecento. A living testament to the city's political, artistic, and architectural evolution. Top reasons to visit:
1- The construction of Palazzo Vecchio, attributed to Arnolfo di Cambio, began in 1299. Built over the ruins of the Uberti Ghibelline towers and atop a Roman theater, the palace exemplifies the triumph of the Guelph faction. It has served as the seat of the city council, composed of the Guilds of Florence, and even housed Duke Walter VI of Brienne. The architectural design, initially severe and medieval, concealed sumptuous halls and residential apartments​​.
2 - Created during the Republic of Fra' Girolamo Savonarola in 1494, the Salone dei Cinquecento is the most significant room in Palazzo Vecchio. Originally basic and almost devoid of decoration, it was later chosen by Piero Soderini for grand murals by Leonardo da Vinci and Michelangelo Buonarroti, depicting the Republic's victories. Although these works were never completed, their initiation marked a high point in Renaissance art. When the Medici returned to power in 1540, they transformed the Salone into a symbol of ducal authority. Giorgio Vasari was tasked with its renovation, elevating the ceiling and adding a coffered structure with forty-two panels. The room's decor glorified the Medici family, replacing the original allegory of Florence with a depiction of Duke Cosimo himself​​​​​​.
Palazzo Vecchio, located at Piazza della Signoria, Florence, is open to the public as a museum. It offers various guided tours, some specifically tailored for families with children. It’s a 16th-century edifice that serves as a living museum, showcasing the grandeur of Sevillian nobility. Today, it remains a semi-private residence, partly inhabited by the 18th Duchess of Medinaceli and her family. Here are the Top things to check out:
1. Enter through a Renaissance-style marble gate to discover a courtyard adorned with a collection of busts from Roman emperors to Spanish kings, set against the backdrop of exquisite azulejo tiles. I basically spend all my weekends there, drinking coffee, going to book clubs, working at the community kitchen Lentil as Anything, and having a beer at one of the lively bars at night. 

Australians love vintage – which makes Newtown the heaven for vintage clothes, cameras, vinyl records, and much more. I’ve got some new sandals, a polaroid camera, and jewelry, all unique pieces at an amazing price. Worth the hype!

You can easily get there by train, it's just a ride from Town Hall, or simply stay a few days in one of the hostels in Newtown.
