Argentina

This three-hour cooking class teaches you how to make Argentine empanadas in the home of a couple in Buenos Aires. Stuffed with meats, cheeses, vegetables, and more, these savory pastries are a beloved national symbol. Empanadas vary across Argentina, and you’ll want to ask how the Buenos Aires style differs from those in provinces like Salta, Tucumán, or Córdoba.

There’s no more satisfying way to experience a place than by cooking and dining with locals who live it every day. This hands-on class invites you to don an apron and unleash your culinary creativity. You’ll learn how to prepare a “proper” empanada that would earn a nod from any Porteño (Buenos Aires local). This ceramics experience takes place just outside the adobe town of San Pedro de Atacama, in a quiet natural setting with views of volcanoes and the Martian-like plains of the world’s driest desert. A short 10-minute drive brings you to the outdoor workshop site, where host Antonia welcomes you with all the materials needed to create your own stoneware piece using ancestral Atacameño clay.

Throughout the session, you’ll shape a personal keepsake inspired by the desert’s landscapes, plants, and animals—guided by Antonia, who shares insights into the cultural and historical roots of ceramics in the Atacama region. The workshop encourages a slower, more mindful engagement with place and craft.

No previous ceramics experience is needed; Antonia offers step-by-step support. Afterward, your piece will be glazed and kiln-fired, then shipped to your preferred address. The session also includes a light breakfast shared with your host Antonia in this striking desert setting.

Antonia works with a type of clay unique to San Pedro de Atacama—formulated by her through adaptations of the ancestral clay once favored by the Licarantai people for its resilience. This clay carries a distinct hue and holds the essence of the world’s driest desert. As she guides you through the process, Antonia shares how each part of the practice—from sourcing the earth to shaping the form—is a quiet act of reciprocity and respect for Pachamama.

Antonia Del Pedregal is a ceramic artist based in San Pedro de Atacama. She has lived in the adobe town for six years, spending the past four creating sculptures and functional pieces inspired by the desert landscape. Antonia preserves Indigenous molding techniques while working with a local clay she has adapted to suit her own style and needs.

Before following her heart north, Antonia briefly worked in advertising and later as a pastry chef in Puerto Varas. Although cooking remains one of her passions, she found her true calling in San Pedro after a chance encounter with ceramics and stoneware. Primarily self-taught, Antonia draws inspiration from the stark landscapes, resilient nature, and connections she has built with the Atacameño community. She is passionate about sharing her craft with visitors, offering a window into the land and traditions that shape her work.

Peru

Have you ever wondered about the daily life of an archaeologist and what they do behind the scenes? This workshop lifts the lid on the care that goes into the preservation of archaeological finds. And doing so in Cusco places you within one of the most archaeologically layered regions of the Andes.

Hosted by local archaeologist Delsi and her sister, Yessika, you gather at a workstation around an assortment of artifacts sourced from the valleys around Cusco and the Sacred Valley. You learn about the pre-Colombian cultures of the region and how archaeologists use identifiers to place ceramic relics into historical contexts. Delsi then guides you through identifying ceramic types and approximating the age of vessels using simple metrics. You learn about excavation techniques in the region and how finds are cleaned, identified, and registered.

After lunch, you visit the Regional History Museum, where the knowledge gained earlier provides a new lens for reading the objects on display.

This archaeologist-led workshop offers rare access beyond the display case, allowing you to discover ancient pottery techniques used in Cusco and the Sacred Valley. You'll hold centuries-old fragments in your palm and use a microscope to identify materials used by pre-Colombian cultures in the manufacture of pottery. This may lead to a discussion of how pigments were produced for decoration and how vessels were used. From even a small fragment of pottery, you learn how archaeologists determine which part of a vessel it came from, estimate its size, and infer its function using systematic methods. In some cases, there is time to reassemble fragments, revealing how broken pieces come back into form through careful analysis.

After a local lunch, you visit the Regional History Museum with Delsi, applying what you’ve learned to objects on display. This museum visit, with an archaeologist at your side, allows for deeper engagement with Cusco’s archaeological heritage.

Irish-born Daniel O’Shea and Peruvian-born Delsi Espinoza are the co-founders of an archaeology venture that contributes to preserving the cultural heritage of Cusco and Sacred Valley. The couple have teamed up on archaeological projects across Cusco's Southern and Sacred Valleys. They run conservation, artifact registry, and site mapping projects — primarily designed for volunteers and students. Daniel and Delsi’s Fernwayer experiences are uniquely curated for curious explorers seeking to step into the shoes of an archaeologist for a day.

Delsi, a fully licensed archaeologist from San Sebastian in Cusco, hosts this experience alongside her sister, Yessika. Since graduating from the Universidad San Antonio Abad Cusco in 2014, Delsi has led regional excavation projects, maintenance programs, and educational initiatives. She has worked directly with the Peruvian Ministry of Culture, international organizations, local municipalities, and national parks parks including Machu Picchu. 

This is a food-and-neighborhood experience through Istanbul, tracing the daily routes locals take every day. It begins at the Spice Bazaar, where shelves of saffron, sumac, and dried figs recall the city’s trading past. From there, you’ll board a ferry across the Bosphorus and explore three villages on the Asian side—each with its own rhythm.

In Üsküdar, snack on street simit and stuffed mussels while browsing produce stands that locals frequent. Then hop into a dolmuş (mini-bus) to reach Çengelköy, a waterfront village known for its pickled cucumbers, tea gardens, and hillside lanes. From there, head to Kuzguncuk, where wooden houses lean into each other and synagogues sit beside churches. At every stop, you’ll sample what’s fresh: gözleme off the griddle, olives, cheeses, pickles, baklava, and tea. The route ends in a family-run café, tucked behind grapevines. You'll get a taste of the local commute—eating your way through 4 neighborhoods while hopping between ferries and minibuses.

This experience follows Istanbul’s real arteries—ferries, dolmuşes, and backstreets—through four neighborhoods on both sides of the Bosphorus. Spain

La Madrugá is the most intense night of Semana Santa (Holy Week) in Seville. During the week leading to Easter, the city fills with processions organized by religious brotherhoods — traditions dating back to the 16th century.
Around midnight on Maundy Thursday into the early hours of Good Friday, Hermandad de la Macarena — founded in 1595 and one of the most revered brotherhoods — leaves its basilica and moves slowly through the city in a procession that lasts up to fourteen hours.

You witness the Virgen de la Esperanza — her 17th-century image with glass tears — carried beneath a canopy of candles. Trumpets sound, drums pulse, incense drifts through the streets. At times a saeta — a raw flamenco lament sung from a balcony — falls into the silence. This experience places you at street level at a few emblematic points in the passage of La Macarena through Seville. With a knowledgeable local Seville guide, you’re in the flow of the procession — at close range to the nazarenos and pasos.

 For many, La Macarena is a symbol of Seville itself, generations have brought their prayers, fears and hopes to her. She is worshipped as the protector of bullfighters, recipient of emerald brooches, and bearer of three mantles worn in succession. Her float advances at the pace of the men beneath it, their feet visible below draped velvet.

Anthropology Museum

If you choose Chapultepec Castle instead of Museo Tamayo, Andrea will arrange to visit this first — so you can make the climb while the hill is still cool and shaded.

Perched high above the city, the castle commands sweeping views of the valley and stands as a symbol of Mexico’s layered history. Built in the late 18th century, it has served many lives — first as colonial palace, then as residence of Emperor Maximilian I and Empress Carlota during the Second Mexican Empire, and later as official home of Mexico’s presidents. Today, it houses the National Museum of History, where rooms are preserved with 19th-century furnishings, imperial artifacts, and murals tracing the country’s struggle for independence and revolution.

Highlights include Maximilian’s ornate chambers, the Hall of Battles, and murals by Diego Rivera and other great Mexican artists. From the terraces, weather/visibility permitting, you can see the city stretching below — green canopy to skyline.

After your morning exploration through Mexico’s past and modern expressions, Andrea will take you to a restaurant for an extensive lunch where you'll get to try various dishes representing some of the best of Mexico City cuisine.

From there, you visit the Sala de Arte Público Siqueiros, a remarkable insitution that preserves the experimental studio and public mission of David Alfaro Siqueiros, one of Mexico’s great muralists. Housed in the artist’s former home and workshop, the building still bears the traces of his process — large-scale murals, technical studies, and the curved walls designed for his “Polyangular” method, meant to let art move with the viewer.

You walk the line between art and activism, between creation and conviction — a fitting conclusion to the day.

The afternoon seeks to tie the day’s themes together: Mexico’s art as memory, power, and reinvention. It begins at the Kit Garden, where Joana Vasconcelos’s striking red sculpture was created to bring people together. From there, you’ll head toward the Mouraria and Alfama districts, where narrow alleys were once filled with the voices of the varinas, the fishmongers who carried the day’s catch through the streets, and the fado singers who turned everyday struggle into haunting songs.

I remember wandering through narrow streets and finding tiny bars with real flamenco. It felt genuinely lived in.”
 “Tourism has definitely changed things,” she admits. “Places like La Rambla are overcrowded. Many locals have been pushed out by the rise in tourist rentals. But Catalans are proud of their traditions. They’ve started resisting these changes to preserve the city’s character.” That character is what Manila has grown to love. “I chose Barcelona because I felt an immediate connection. The Mediterranean lifestyle, the weather, the proximity to mountains and sea — it feels like home but also stretches me outside my comfort zone.” She relishes the contrast to her native Sicily. “I can take a train and be skiing in the Pyrenees in just over an hour. Where else do you get that?”
What keeps her in Barcelona is the balance of tradition and openness. “The cuisine, the olive groves, the vineyards — they remind me of southern Italy, but they’re uniquely Catalan.” And the city’s connectivity has made it easy to stay rooted while maintaining close ties to Italy. She speaks with admiration about the people: “Catalans are proud, resilient, and united. They have a strong sense of identity and community. Whether through demonstrations or cultural festivals, they come together. They’re efficient and organized, but also keep that relaxed Mediterranean vibe. It’s a unique combination.”

I was told that I would find the best cup of coffee in the world in Colombia’s Zona Cafetera. I found some of the tastiest beans in little vintage cafes with vintage coffee machines. The coffee plantations nearby offered tasting sessions too. Part of the fun Is to climb on the back of a colorful Jeep to get to the plantations.

On the Coffee Road, in the colorful town of Salento, the biggest attraction - besides the coffee and the arepas - is its traditional architecture of one- and two-story buildings, with walls painted white, and doors and window frames in the brightest of candy colors.

Ouzoud Waterfalls

The narrow, bustling alleys illuminated by rays of light filtering through makeshift coverings are a common sight in the Medina of Fes, where the blend of shadow and light creates a mysterious and historical ambiance, perfect for exploring on foot. It's an excellent depiction of daily life within the heart of Fes, showcasing the energy and the dense social fabric of this ancient city.

The contrast between the high-heeled boots that seem to be the footwear of choice for young women in wintertime and how Fes is rooted in time is a stark contrast of the past, present, and future that all exist. Marrakech’s medina had felt medieval, but it cannot compare with the proud, faded, crumbling, stately stance of Fes. The architecture is more intricate, the medersas older, the beliefs stauncher, and the passages more secretive.

I step aside just in time as I hear the chant – “Balak, balak” (watch out, watch out) – and a mule laden with fruits saunters past. Mules aren’t officially allowed, says my guide Karima, pointing to a sign at one of the doors of the medina. She’s taken it upon herself to quiz me about Arabic words. What is ‘door’ in Arabic? That’s easy, I say, pointing to the sign at one of the medina entrances, Bab ____ (pronounced not unlike the name ‘Bob’!).

The most memorable sound? Place Seffarine, a square known for its rhythmic orchestra: metal clanging on metal, non-stop throughout the day. Under the protection of a centuries-old tree, talented craftsmen hammer and sculpt copper pots and pans in cacophonous harmony. We sipped mint tea and people-watched, entranced, for a whole hour.
