This experience takes place on Shrove Thursday each February (12 Feb 2026 or 4 Feb 2027), in Bazas in the Gironde countryside, during the Fête des Bœufs Gras. Held since the 13th century, the festival marks the moment when local Bazadaise cattle, a breed prized for its rich, marbled beef, are brought into the historic center to be celebrated. The oxen adorned with ribbons and flower crowns reach the cathedral square, while music and dancing spread across the town.

With Anne, who lives in Bazas, you move through the town as the day unfolds. You observe the cattle, listen to live music played throughout the streets, and take time to talk with the people who raise and work with this breed. The pace is informal and shared, reflecting a local day where people meet, eat, talk, and stay together.

As a chef, Anne explains why Bazadaise beef is prized for its marbling and rarity — often compared locally to Wagyu — and how it continues to shape cooking, identity, and everyday life in Bazas.

Anne Jordan, chef and guide with over thirteen years of experience, has lived in Bazas since the very moment she and her husband visited the village and decided to stay, a decade ago. This is a spiritual and immersive storytelling experience that invites you into the mystical world of Sufism through music, narrative and spirituality. Set in a traditional riad, the evening unfolds in three parts: a guided lecture, a live Sufi music ritual, and an intimate dinner. This is an experience designed for the curious and contemplative. Embark on a 3.5-hour immersive journey through the rural landscapes of Loulé, beginning at Ponte dos Álamos, the gateway between urban life and the serene countryside. If you are interested in rare natural phenomena and want to learn more about marine life, you should head to Mexico's Pacific coast. One of the best spectacles is the annual whale migration, where you can catch unique glimpses of humpback whales. 

The largest mammals on earth have earned their reputation as the most beautiful, intelligent, and impressive creatures. If you watch the ocean at migration time (either from the shore or on a boat tour), you'll see baby whales leaping and maybe even hear mother whales calling their families together. The baby-whale season is from January until the end of April.

But the Pacific coast is not only known for whales. It's just as beautiful to watch sea turtles hatch. If you come at the right time, you can witness mother turtles laying hundreds of eggs overnight in the soft sand on the coast, and much later, those hundreds of babies hatch and crawl toward the sea. Come between late August to early October.

The Generalife Palace, located in the Alhambra complex in Granada, Spain, is a stunning example of Islamic architecture and one of the most beautiful parts of this UNESCO World Heritage site. Originally built in the 13th century as a summer palace and retreat for the Nasrid sultans, the Generalife is renowned for its lush gardens, tranquil courtyards, and spectacular views of Granada and the surrounding mountains. Its name, derived from Arabic, means “Garden of the Architect,” reflecting its harmonious blend of architecture and nature.

1. Patio de la Acequia: This stunning courtyard is the heart of the Generalife. With a long central pool framed by water jets, fountains, flowerbeds, and lush greenery, it exemplifies the traditional Moorish use of water to create a peaceful atmosphere. 3. Sala Regia: This grand hall in the Generalife showcases intricate Islamic designs, with beautiful plasterwork and arched windows. It’s a reflection of the luxury the Nasrid rulers enjoyed in their summer palace.

4. Views of the Alhambra and Granada: From various points in the Generalife, you can enjoy spectacular views of the Alhambra Palace, with its red stone walls, as well as panoramic views of Granada and the distant mountains. It’s the perfect place to take in the surrounding landscape.

With 25+ years of crafting Jamaican traditional meals, Chef Chris gained fame when Anthony Bourdain showcased his skills on "Parts Unknown" in 2014. 

From the moment we stepped into the Cook Shop, all our senses were engaged. The local scenes, the staff busy with their preparation and the aromas from the kitchen. But it was Chris's warm welcome that made the experience truly unforgettable. We chopped, marinated, and grilled under his guidance, learning the art of his signature jerk chicken and curry goat. Then we gathered on his rooftop deck overlooking James Bond Beach in the distance – a lovely backdrop to our culinary adventure - to eat together. We savored the dishes we helped create, and Chef Chris even shared a packet of his secret curry powder for us to take home.

Fez, Morocco, is home to the Karaouine Mosque and University, one of the most significant religious and educational institutions in the Islamic world. Founded in 859 AD, it is recognized by UNESCO and the Guinness World Records as the oldest continually operating university in the world. This architectural and spiritual masterpiece has long been a center of knowledge, attracting scholars from across the Muslim world. While non-Muslims cannot enter the mosque, its stunning green-tiled roofs, intricate stucco work, and grand archways can be admired from various viewpoints in Fez’s medina.

1. The exquisite courtyard, adorned with delicate mosaics and marble fountains, reflects traditional Moroccan craftsmanship and serves as a peaceful retreat for worshippers and students.

2. The library, one of the oldest in the world, houses priceless manuscripts, including works by Avicenna and Ibn Khaldun, preserving centuries of knowledge and scholarship.

Karaouine Mosque

Mexico City, Mexico, is home to Templo Mayor, the heart of the ancient Aztec capital, Tenochtitlán. Discovered beneath the Zócalo (main square) in the 1970s, this archaeological site and museum showcases the remains of the Aztecs' most sacred temple, dedicated to Huitzilopochtli (god of war) and Tlaloc (god of rain). Walking through the ruins, visitors can imagine the grandeur of the Aztec empire before the arrival of the Spanish conquistadors.


1. The ruins of the main pyramid, which was built in seven layers over centuries, revealing the evolution of Aztec architecture.

2. The massive stone of Coyolxauhqui, a spectacular carved disc depicting the dismembered moon goddess, a key figure in Aztec mythology.

Templo Mayor

Peloponnese, Greece, is home to the legendary Mycenae Archaeological Site, one of the most important ancient sites in the country and a UNESCO World Heritage Site. Once the heart of the powerful Mycenaean civilization (1600–1100 BCE), this ancient citadel was famously linked to King Agamemnon, the leader of the Greeks in Homer’s Iliad. Today, visitors can walk through the remnants of this Bronze Age city, exploring its massive stone walls, royal tombs, and iconic Lion Gate, all while enjoying breathtaking views of the surrounding Argolid countryside.

1. The Lion Gate, adorned with a pair of stone lions, serves as the monumental entrance to the citadel and is one of the most iconic symbols of ancient Greek architecture.

The Moroccan fig liquor is beginning to sneak up on me. Or perhaps it’s the jet lag. The soulful music of the live folk vocalist is not helping either. 

We’re waiting for dinner, in the courtyard of a restored Riad. It’s a good thing I haven’t eaten much during the flight because very soon, it’s clear that they expect me to have the appetite of a small army. 

The food is absolutely delicious, and here’s what I learn:
“Salad” is a selection of 5-10 amazing dips served with khobz - flatbread. 
Pigeon pastille is a must-have any time you see it on a menu!
Tagine of lamb with fluffy couscous - when cooked to perfection as it is here - is irresistible. 

This is followed by an elaborate dessert course, mint tea prepared with precision and ceremony, gnawa singers and a belly dancer who insists on audience participation. 

This story celebrates a series of unforgettable meals in Marrakesh - some in fine restaurants and others on the street.

"If I know a song of Africa, of the giraffe and the African new moon lying on her back, does Africa know a song of me?", mused Karen Blixen in Out of Africa. I am too much of a nomad but if I ever owned a farm, as Ms. Blixen did, it would be in the Lamai Wedge - located in the triangular watershed between the Kenya border and the Mara river. Possibly the most beautiful place in East Africa. Besides being a refuge for the Great Migration after crossing the River Mara, it has great game year-round.

Until recently, no camps were allowed here, but now you can stay at the Singita Mara River Tented Camp and a few others. 

And wake up at dawn to catch the sun filtering through the clouds and mist. The Wildebeest seem a little dazed as they contemplate the scenery over the hills of Kenya while eating succulent grasses - and staying out of the way of the cheetah brothers out on a prowl, with whom we tagged along for an unsuccessful hunt. Life is tough.

The Puente Nuevo and Ronda Bullring are two of the most iconic landmarks in the picturesque town of Ronda, located in Spain’s Andalusian mountains. 4. Alameda del Tajo: A short walk from the bullring, this peaceful park is set along the cliffs, offering shaded paths and more impressive views of the surrounding landscape. It’s an ideal place to relax after exploring Ronda’s landmarks.
